Zucchini Oatmeal Waffles

I searched this recipe to use up some garden zucchini and the whole family enjoyed them. My six year old was less than enthusiastic to try but enjoyed them immensely, announcing that you couldn't even taste the zucchini, which I found to be true. They never crisped up very well like regular waffles, but maintained a more bread texture which was fine with us. I also found the batter to be pretty thick for the waffle iron so after the first batch I ended up adding extra milk to the mixture. I dumped a lot of cinnamon in as is my style but next time I'm going to take my love of spices to a new level and add cloves, nutmeg, cinnamon and ginger. I do this to all my banana/zucchini/pumpkin breads and it has never failed me. We served them with maple syrup warmed with butter and a side of grilled peaches. It was a delicious and filling breakfast. Oh yeah, I also used whole spelt as I try not to use wheat in my baking to avoid possible future food intolerances.

Sauteed Beet Greens

This was my first introduction to beet greens and I loved it. I had some ricotta cheese I needed to use up so I threw it in there and loved it.

Dairy and Wheat Free Apple-Cinnamon Spelt Waffles

I used regular milk and applesauce because that's all I had on hand, but the whole family liked it. I also added a bit of nutmeg and just beat the whole eggs in to save time, so I guess I didn't really follow the recipe to much, but as a base recipe it worked well.

Donna's Chocolate Zucchini Bread

Very good bread. I made mine with whole wheat flour, used 1.5 cups of brown sugar, added an extra cup of zucchini and threw in some chocolate chips. Delicious.

Curried Squash, Garbanzo Bean, and Potato Stew

I loved it! Based on other reviews, I cut the spices in half and it was perfect, but I don't like anything too spicy. I had fresh squash and just put it in with the potatoes. I also added some garlic to the onions because I like garlic :-) I also added 2/3 cup quinoa for added protein and nutrition. I'd say this is a new top favorite of mine, especially as I am trying to limit my meat consumption for health reasons.

Low-Fat Blueberry Bran Muffins

I loved this recipe! Moist, delicious, and best of all, healthy! I put in all whole wheat flour instead of half white flour and the taste was still great-not to mention much more nutritious. I also added some wheat germ to boost the nutrition.
