Microwave Peanut Brittle

So great!!! Mom wasn't going to let me use a new recipe, and insisted the first batch be the one she's used for 20+ years. After seeing the ingredients and amounts were the same on this one, she said we could try it for the second batch. We ended up using this recipe for the rest of the batches! It doesn't stick to your teeth the way other kinds do, which was the one thing I always hated about peanut brittle. We changed one thing: after adding peanuts, microwave for 2 mins, stir, then microwave for 2 more mins. It sets up better.

Chocolate Espresso Cookies

Does NOT work for cookies--the batter is much too thin, even after adding additional flour. They flattened right out and were dry within 8 minutes. Makes better brownies.
