Crunchy Romaine Strawberry Salad

I've been making this for years and it's always a huge hit. It is so easy and so good, and makes you look like a pro chef. I've altered it a number of ways based on what I have in my fridge. At one time or another I've used pecans, green leaf lettuce, balsamic and even white vinegar, no scallions, etc. One time I went without the ramen and while no one else knew better, I definitely missed it. I also always cut the dressing in about half. All in all this is an awesome recipe.

Campbell's® Creamy Dijon Chicken with Rice

This was really easy and very good. Nice Dijon flavor and it was very creamy. I will add lemon juice next time but that's it. I only cook for two so I saved the rest of the sauce for next time.

Fresh Tomato Pasta

Love, love, LOVE this recipe. I used whole wheat spaghetti, sautéed the tomatoes for a few min, added white cooking wine and cut back on the oil. I also took out the garlic after the pasta was done, chopped it and added it to the tomatoes with some garlic powder. I sprinkled it with some fat-free parmesan "topping" and it was great. So quick, and so tasty.

Quick Lemon Dijon Chicken

Sorry to ruin a good rating, but I just couldn't get this to work. The sauce is very thick and by the time the chicken was done my pan was completely covered in burned mustard. I tried it three times thinking I was doing something wrong. Under the burned outside, it actually tasted good, but the clean up time defeats the purpose of a quick meal.

Pudding No-Bake Oatmeal Cookies

Original recipe is confusing as far as evaporated milk goes. 1/2 can (12oz) means 6oz, so maybe that's why others had problems with the cookies setting. I read it wrong the first time too and almost dumped in the whole can. I used 6 oz and they were not too moist at all, actually almost too dry. They didn't set on their own so I popped them in the oven at 400 for 7 min. I had no parchment paper so I just sprayed the cookie sheet with PAM and it worked fine. Any longer than 7 min though and they burned (oops). I also used splenda, fat-free/sugar-free pudding, and fat-free evap. milk. Will try to experiment with butter substitute next time.

Incredibly Cheesy Turkey Meatloaf

This meatloaf is amazing. I think it tastes better than any beef meatloaf I've had. I took other users' advice and used shredded cheese (only had cheddar on hand). I also added ketchup and grated Parmesan cheese (reduced-fat) to the top before baking which made a nice crust. I will most definitely make this again.

Campbell's® 15-Minute Chicken and Rice Dinner

I really liked this recipe. Although, the pepper was way too strong. I will only add a dash next time. The 15 minute claim is a bit misleading when you consider prep time, but it's still super fast. I also use brown rice to make it more healthy.

Basil Cream Chicken

I made a lot of modifications and it was still delicious. I used fat-free milk to coat the chicken and I browned it using Pam instead of butter, then baked it the rest of the way in the oven. I used fat-free chicken broth, fat-free evaporated milk instead of cream, and reduce-fat Parmesan cheese. Also, no pimentos, don't like them. I cook with these ingredients all the time so it tasted great to me! But, it probably won't be good for those who are used to the higher fat version. I will definitely make this again but next time I will add garlic like some have suggested.

Award Winning Soft Chocolate Chip Cookies

These cookies taste great. I took some suggestions from the reviews (baking soda and baking powder, salt, more vanilla, cooking time, etc.) However, my cookies never rise, they spread out flat. No matter how they look though, they always taste fabulous and I get a lot of compliments on them.
