Almond Flour Waffles

These waffles were pretty good and pretty quick to make. My 3 year old woke up wanting waffles, and I needed something quick. Every other paleo recipe out there is much more involved. These took 5 minutes to put together. Reading the other reviews, I used unsweetened applesauce for the honey so they wouldn't be too sweet. I did add about a teaspoon of honey along with the applesauce. They were not too sweet with maple syrup on them. The waffles were not crisp like "normal" waffles, but the they weren't too flimsy either. I give this recipe 4.5 stars, only losing 1/2 a star for the consistency. Although they lack in consistency, the time it takes to throw these together makes up for it.

Quick Black Beans and Rice

Made this tonight, and it was delicious and very easy. I didn't have stewed tomatoes, so I just used chopped Italian tomatoes. I think next time I will probably just regular rice instead of the minute rice just to give it a little bit better texture, but I will be making this again.

Chicken Florentine Casserole

DH gave it 5 stars, I gave it 3, so I averaged at 4 :) We are not big mushroom people, so I subbed out onions for the mushrooms, and cream of chicken for the cream of mushroom. I made my own bacon bits. I sauteed fresh spinach with the onion in some butter and some leftover bacon grease. I did not cook the chicken, but cut it up and put it on top of the spinach. Served everything over bowtie pasta. Everything was good, but a little too rich for my liking. I will make this again, but sub out some of the butter and not use bacon grease to sautee the spinach. I will admit, this was very tasty, just a bit too heavy.

Mexican Casserole

So good and easy! Took other suggestions and did not drain the corn or beans, also doubled the amount of salsa. I put a layer of chips on the bottom, then chicken mixture, then a small layer of chips on top covered by the cheese. I think next time I will put in some chopped Jalapeno into the chicken mixture to try and give it a little more kick. I usually put a whole packet of taco seasoning in.

Pumpkin Chocolate Chip Muffins

Tried this this morning and made the usual substitutions to make it a little healthier: used applesauce instead of the oil, brown sugar instead of white (and cut back to 1/2 cup), and used 3/4c all purpose and 3/4c whole wheat flour. Also bumped up the spices and used a 1 tsp baking powder. Turned out ok, but still a little bland. My 2 year old ate them tho, so I probably won't up the sugar. Thanks for posting!

Pumpkin Pancakes

Made the recipe exactly as stated, except I subbed out 3 tsps of pumpkin pie spice instead of the spices listed. Same thing, I was just feeling a little lazy. They were very fluffy and moist. Will be making them again this fall! Thanks!

Mike's Taco Dip

Love this recipe. Made it for a few parties and its always been a hit. One time I screwed up and bought taco sauce instead of salsa, but I think I liked the taste a little better. It gave it a little more kick than just mild salso. Something to try!

Slow Cooker Chicken and Dumplings

I stole a couple tips from previous reviewers. I used 1 can cream of mushroom, 1 can of cream of chicken, and chicken broth in place of the water. I also added poultry seasoning, salt, pepper, and paprika. I cooked the "dumplings" for 1 hour (after cooking the chicken for 5). It was DELICIOUS! Definitely a keeper.
