Cauliflower with Dijon Sauce

Great variation for cauliflower! I made this for second time tonight. My husband loved it the first time, and this time, with a little added paprika and celery salt, he liked it even more! Definitely a keeper and super easy to make!

Citrus Turkey Roast

This is a delicious recipe! I am not a turkey lover, but this was so good, I went and bought another turkey breast! I would have preferred a stronger citrus flavor, but still great. And super easy! I love my crock-pots!

Fried Rice Restaurant Style

This was so delicious! I took the advice of another reviewer and heated the rice prior to cooking. I made it for myself, so I cooked all the rice, but only "stir-fryed" about half of it. didn't measure the soy sauce or oil, but used approx 1/3 c. soy sauce and 1/4 c. oil. I also used crinkle-cut carrots instead of baby carrots. It was VERY good and reheated nicely as well!

Broccoli With Lemon Almond Butter

I made this to change up our normal veggies. My husband thought it was okay. I used sliced roasted almonds and frozen broccoli. I will probably make this again, but really wasn't a favorite.

Wasabi Mayo Salmon

Really Really Good! My husband and I are tentative about salmon (I've never cooked it!) but diets recommend it, so we tried. We purchased some filets from Sam's Club. I used the Wasabi paste as that was all that was available at our grocery store and layered the mixture pretty thick on the salmon. I also used regular Ruffles chips, crunched up. I cooked it a little longer than called for and then broiled it on high for about 5 minutes to give the chips more crisp. Very tasty! Next time, might try french-fried onions instead of chips for more low carb. Served with herb-roasted potates and asparagus.
