Chicken Fiesta Salad
This was very good- could've used a bit more flavor. Next time I make it, I'll add the onion to the bean/salsa/corn mixture, as tossing it in with the salad just resulted in it falling to the bottom of the salad bowl. Also, I'll add in some garbonzo beans for added protein. Very versatile dish, healthy, and so easy to prepare at the end of a busy work day!

This was my first guacamole attempt as well, and it did not disappoint. I omitted the cayenne pepper and used 4 cloves minced fresh garlic (seeded the tomatoes as well because I wanted it more chunky, less soupy). My husband polished off the whole thing in one sitting. Amazing.

Chicken Wing Dip
Halved the recipe, otherwise made exactly as stated-- had some leftover rotisserie chicken and used Franks Red Hot Wings- Hot Buffalo sauce. I baked in a 9" round cake pan and set it on the table at the beginning of the Packers game. With 9 minutes left in the first quarter, my husband and I had polished off the entire thing (allegedly 8 servings). Awesome.
