Oatmeal Pancakes II

Delicious! Some changes/suggestions: 1. cut baking soda in half 2. don't have buttermilk? Place 1 tablespoon vinegar in a measuring cup per 1 cup milk (this recipe would need 1 1/2 T. vinegar). Add milk to make 1 1/2 cups. Mix and let stand for a few minutes. 3. Pulse dry ingredients in blender or food processor. Then add wet ingredients and stir gently until just blended. There should be lumps! 4. The original recipe makes approximately six 4-inch pancakes. I doubled the recipe but still only used one egg. These were great!

Gourmet Sweet Potato Classic

Excellent Recipe! Followed directions exactly, except I used half the amount of sugar called for in the potato mixture. This is SO MUCH better and classier than marshmallow-topped sweet potatoes. Everyone at our Thanksgiving Dinner raved about them!!

Tangy Slow Cooker Pork Roast

SOOO GOOD! I first browned the roast in a skillet and then doubled the ingredients. Cooked it in the slow cooker for 9 hours and the meat literally fell apart when I tried to plate it. The tang is delicious and a perfect combination with pork.

Creamed Chicken for Biscuits

Delicious and simple! A great use for leftover chicken. I loved that this didn't used a can of condensed soup, yet still could be made very quickly. I left out the peas and almonds, a served over homemade biscuits.

Tuna Noodle Casserole III

I added frozen peas, mixed all the ingredients together instead of layering it and topped the entire dish with parm. cheese and bread crumbs. Very good and so quick to make!

The Best Lemon Bars

Delicious, buttery shortbread crust makes all the difference in this recipe. I made 1 1/2 of the crust to make an extra thick layer and doubled the lemon mixture as well!

Pumpkin Cream Cheese Muffins

Delicious and SO moist! A perfect treat for Autumn. Here are a few things I would suggest: -Triple the streusel topping and use brown sugar instead of white sugar -Refrigerate topping and cream cheese mixture after preparing them until ready to use. This keeps the butter pieces firm and the cream cheese from getting too runny. -Use a 2 Tbs. scoop to get the perfect amount of batter in each muffin cup. Also makes for an easy release of the batter into the cups without making a mess. (Makes 24 muffins) -I did them at 375 for 18 min and they were a little too brown on the bottom, but still very moist. I will try turning down the heat to 350 next time.

Cola Pork Chops

You can use this Cola BBQ sauce on any meat from pork to chicken to ribs. I used Vanilla coke and it gave the meat an amazing flavor. Also, I substituted 1/2 cup thick and spicy BBQ and cut the ketchup in half for a little more of a kick This also helps to thicken the sauce. I made a simple dry rub of ground pepper, garlic powder and onion powder for the meat before placing the sauce on them. Turned out great!
