Vegetarian Moussaka

This is excellent. I grew up eating my Yia Yia's lamb moussaka, but became a vegetarian years ago. This doesn't taste quite like hers, but it's still delish. To cut some fat/save some time, I roast the vegetables instead of frying them. I also use lemon juice instead of vinegar and omit the tomatoes from the lentil mixture (they might be tatsy, but Yia Yia's moussaka never had tomatoes in it!)

Garbanzo Bean Chocolate Cake (Gluten Free!)

Super duper easy to make. I added a teaspoon of cinnamon (McCormick is gluten free) and a teaspoon of vanilla (Kroger brand is gf) to mask some of the garbanzo bean flavor.

Imitation Meatloaf

This was filling and tasty. A little salty, so you might want to use low-sodium soy sauce, bread crumbs, etc. Panko breadcrumbs helped reduce the salt. We used cheddar cheese instead of mozzarella and it was very tasty.

Chicken Marsala

This is delicious. I was frightened of all the butter and oil (got a sensitive stomach when it comes to that stuff), so I only used 2 T of oil and 1 T of butter. Turned out just fine.

This was really good. I think I'd add less oregano and less celery and more beans. And maybe a couple cans of corn. I used orzo instead of shells and it worked just fine.
