Cheesy Kale Chips

Did this recipe almost exactly as written - my oven crisped the kale up nicely in 40 minutes that was the only difference. I won't have enough to save until tomorrow because I can't stop eating it - SO delicious.

New Red Potato Salad

Oven-Roasted Turkey Breast

Crispy Barbequed Tofu Slices

I have tried this recipe multiple times now, and each time I end up doing it slightly differently, bake a little longer or shorter, forget that I put something in the fry pan and almost burn but, but it doesn't matter! Every single time it is DELICIOUS!!!!

Slow Cooker Balsamic Chicken

I made this last night for dinner and my not-at-all-picky husband said it was "edible" but "not worth trying again." The only tweak I did was to cook on low, I was hoping it would not be done for a while since I had other things going on last night, but it was done in 4 hours. Definitely won't be trying this one again.

Mint Jelly

I started making this recipe but I felt that steeping the mint for only 10 minutes did not yield a minty enough base to my taste buds. I ended up steeping for about an hour. I also omitted the food coloring, why add artificial dyes to a dish that is beautiful just the way it is? My main complaint is that the author forgot to include how much head-space to leave when filling the jars.

Hot Pepper Jelly

Yup, I too loved this recipe, as did many of my coworkers. I followed the other suggestions and used two packages of the 1.75oz powdered pectin and got a great gel consistency. Also, I drained the bell peppers after chopping them. My final adjustment was using super chills instead of jalapeƱos but really any hot pepper would probably be fantastic. Great recipe for a first time jelly-maker and canner like myself.

Pumpkin Cheesecake I

I did this recipe twice. The first time I filled a 9x13 pan and the recipe was VERY THIN. Then I tried again and filled one 8x8 pan and it was GREAT, much thicker! I also cut the cheesecake into squares and put them on top of ginger snap cookies for individual bite size pieces. I won a friendly dessert competition in the Non-Chocolate Dessert Category!

Roasted Pumpkin Seeds

I have found roasted pumpkin seeds MUCH tastier if you remove the guts from the seeds, but then bake the seeds with the guts. Also DON'T rinse them as this just rinses off the yummy pumpkin flavor. Bake in a glass pan with olive oil and salt and the guts, stirring occasionally. I get rave reviews from my co-workers for having such tasty seeds. They do get a little soggy if packed into tupperware or plastic bags, but still yummy.

Chocolate Mice

I used Chow Mein noodles for tails instead and the added crunch was fun. Also, I tried this recipe twice. Once I only coarsely crushed the chocolate cookies and the other time I sifted them to make a fine powder. The coarser one were much better. I also used Oreo cookies both times (I scraped out the insides) and they were VERY tasty. BIG hit at the halloween party!
