Garlic Cheese Grits with Shrimp

I am giving this 5 stars because the shrimp mixture with the sauce is incredible and SO easy to make, however I used the Velveeta grits recipe the first time I made this and it was awful. As a Southern girl who knows a thing or two about grits, I recommend you use real cheese, a dash of garlic, and some cayenne for your grits...cook them really low and keep adding water and/or milk until you get a nice, smooth consistency. I don't really modify the shrimp portion of the recipe, except for adding a little extra garlic and some turkey sausage (since shrimp is so expensive). I make this weekly and my family loves it!

Mouth-Watering Stuffed Mushrooms

I have made this several times and gotten rave reviews! And it is so easy to make! I always end up stuffing an entire package of mushrooms with the amount of filling this makes. I make sure to only include 12 of the stems in the mixture, though, and discard the rest. The last time I made this I mixed everything together as soon as the sauté mixture came off the stove. This really softened the cream cheese and made it much easier to manage. I also put the filling in a ziploc and cut off one edge and squeezed it into each shroom, which was super-easy and fast.

Black Beans and Pork Chops

I tried this in the skillet a few times but thought the pork chops turned out too tough. So a few nights ago I threw it all in a baking dish, covered it with foil and slow-cooked it in the oven at 275 degrees for 3 hours. Heavenly! I used fresh salsa from the deli, and served it with yellow rice and sour cream.

Baked Honey Mustard Chicken

I thought this was very tasty and so did my family. I made as written but baked covered. We had enough "sauce" that we could have put it over rice, so I will probably serve it with white or brown rice the next time I make it.

Asian Pork Tenderloin

This is so delicious! I made it for New Year's Eve and got rave reviews. I didn't change a thing except that I convection roasted it at 325 degrees. I did as another reviewer suggested and preserved the marinade, boiled it, then added water and corn starch until I got my desired taste/consistency for a gravy. I served it with jasmine rice. Did I mention it's delicious??

Lime Fish Tacos

The marinade was delicious. I was completely amazed that my kids loved it. However, my husband and I both thought the sour cream sauce was terrible. I wouldn't even know what to do to fix it. I will make the marinade again but try to find a topping from another fish taco recipe.

Baked Scallops

I did not care for this. I made it exactly to recipe. The parmesean and bay scallops were just not a good flavor mix. I thought the parmesean brought out the fishy flavor too much. Might try with shrimp, as another reviewer suggested.

Chicken Salad

I did not think this was great, but my husband and mom both said they liked it (I think they were trying to make me feel better). The bacon, water chestnuts and worchester sauce were too overpowering, and I had to keep adding mayo because it was too dry. Maybe I did something wrong - I might try it again, with some modifications. I'd really like to have a good chicken salad recipe!

Jenny's Jambalaya

I made this last night after doing a quick search for something I could make with the random items I had on hand. It was DELICIOUS and will definitely become a part of my repertoire. I don't think you could really mess this up, but here's what I used since I didn't have all of the exact ingredients: diced tomatoes instead of stewed, Pete's hot sauce, leftover rotisserie chicken, frozen pre-cooked shrimp, full-sized turkey sausage, 1/2 an onion, water w/ chicken boullion cube instead of chicken stock, white rice, and extra garlic - always! I also used a regular chef's pan with a lid because I don't have an electric skillet, and it was fine. I might add a dash of cajun seasoning or Old Bay next time, just to add some more depth to the flavor, but overall it was GREAT! Thanks Jenny!

Sausage Pasta

Yummy! I threw this together with what I had on hand, so I used precooked turkey dinner sausage instead of raw and broccoli instead of spinach. I sautéed the onions in olive oil first, then added the cubed sausage and garlic. I was concerned there would be too much liquid, so (as another reviewer suggested) I put the frozen broccoli in the colander first, poured the pasta water over it to cook it, then set it aside until the last minute of cooking the sauce. My kids and hub loved it - HELLO pasta and sausage! This will definitely be going into the rotation.

Husband-Friendly Chicken Pizza

This has a become a regular recipe in our house. It tastes just like our favorite takeout pizza, minus the $25 pricetag! It's good with the gorgonzola, but you can skip it and not really miss much. Also, I think red onion is too obtrusive so I use sweet onion instead.

Amazing Pork Tenderloin in the Slow Cooker

Oh my gosh! Ultimate comfort food! This was insanely good. I'm not sure why it only has 4 stars. I cooked it on high for exactly 4 hours, and it was just starting to fall apart. I would not advise going any longer or you might end up with shredded pork. I served with brown rice generously topped with the au jus and lima beans on the side. This recipe will go straight to the favorites folder.
