Cream Cheese Frosting I

The best and easiest frosting ever! I only used 1 c. sugar and it turned out perfect for our easter cupcakes! I loved that you could taste both the butter and cream cheese, but they were not overpowering.

Grandmas Chicken Chardon

Great recipe, however, I only used 3 chicken breasts and kept the rest of the ingredients the same...would definatley would at least double the mushrooms. Very easy and tasty!

Creamy Vanilla Pudding

Wow! I will never use instant again! This was so easy and yummy. I tempered the egg/milk mixture so the eggs wouldn't cook and I also used 4 smaller egg yolks becasuse I had to use them up - egg yolks totaled about 1/2 cup.

Cream Puffs

These were so easy and turned out perfect! I did add vanilla to the batter and after mixing the flour into the water/butter, I put the mix into my KitcheAid and added all 4 eggs until the mixture was silky. It made 20 perfectly sized puffs. I did have some problems with them sticking to the pan, which created holes in the bottoms of some. I will use parchment paper next time. Also, I didn't use the filling, but used a super simple vanilla pudding recipe from this site.

Good Old Fashioned Pancakes

I just made these with great anticipation because of the rating...however, I was not as happy as I thought I would be. I am trying to get away from our boxed mix and this recipe is very easy. I, too used 3/4 tsp baking powder and put about 1 tsp vanilla in with the milk, butter and eggs. The batter was absolutely beautiful and I thought I was going to have great pancakes! Unfortunately, they were heavier and not as flavorful as I anticipated. On my part though, I don't think I had my griddle hot enough...it's an easy enough recipe that I may try them again, adding more vanilla, a tad more sugar and maybe some lemon zest or cinnamon and nutmeg.

This was tasty! I used leftover steak and was worried that it might turn out too dry, but it was not at all! I will definately try again - I was out of chives and think that would taste great!

Spinach Salad With Ease

This was okay. We usually do this same salad, but use white balsalmic instead of lemon juice - I think that is still my preference, as it gives it a hint of sweetness.

Balsamic Pea Salad

I thought this was pretty good. It seemed like a lot of dressing (mayo), so I doubled the peas and kept the rest the same. I let it set in the fridge and shortly before serving I sprinkled in some more balsalmic vinegar (I used white instead of regular) because I thought it needed some extra tang.

Artichoke Spinach Lasagna

I really really liked this! I did add the ricotta mixture as other reviews suggested, and I enhanced both that and the tomato sauce with some sun-dried tomato pesto. I used whole wheat no-boil noodles and they turned out perfect. Thanks so much for the recipe!

Spicy Italian Salad

I thought this was good. It's pretty versatile, so you could add whatever you like. I thought the idea of pepperoni and pepperocini's would be good. I didn't have tarragon vinegar, so I just used red wine vinegar. I wish I had the green olives - that would definately have put a little extra zing in this!

Banana Oat Muffins

These were good and I will definately save the recipe to make again. I did make several substitutions...1c whole wheat pastry flour for 1c white flour, 2 eggs instead of 1, replaced 1/2 of the oil with ground flax seed, used about 1 1/2 cups banana and cut the by about 2 Tbs. Thanks!

Winter Fruit Salad with Lemon Poppyseed Dressing

Huge hit! I used feta and toasted walnuts instead of swiss and cashews. I'm curious about the flavors of swiss and cashews in salad, though, so will try them next time.

Spaghetti Pizza I

I thought this was really good, but I did make some changes. I used angel hair pasta and added an extra egg, forgot to add the milk and used regular parmesan cheese in the noodles. I was looking for something to use up my leftover spaghetti sauce and this was perfect. It also made a ton, so I was able to freeze in single serving portions for later.

Peanut Butter Cookies with Chocolate Chunks

I thought these were pretty good. I substituted 1/2 c. whole wheat flour for some of the white flour and I ran out of honey, so had to use 1/8 c of corn syrup. I used Adam's crunchy PB. My dough was not easy to mix as some others have said, and it was extremely oily. Overall though, it was a very easy and fast recipe and would probably make it again.

Gingerbread Biscotti

Mine turned out okay. I know biscotti should be dry, but mine was not a good dry...too floury when eating it...??? I just sprinkled turbinado sugar on the top - it looks and smells beautiful. I guess when I dip it in coffee, it's better.

Absolutely Fabulous Greek/House Dressing

This was good, but not something I would make as written over and over. I like the fact that it is sugar free, but I think something added to cut the sharpness of it would be helpful.

Best Breakfast Cookie

These are great - Wish I had apricots for this batch! Next time I think I will add some oat or wheat bran and also flax meal. I keep mine in the freezer and put them in the microwave for about 20 seconds and they taste like a fresh cookie right out of the oven! Very similar to Baker's!
