Delicious Black Bean Burritos

Reviewed: Jun. 25, 2011
I liked this recipe, but didn't love it. My burritos were not dry, but I did not rinse and fully drain the beans. I am not sure why you would do that, I thought a little bit of the bean sauce was good. I did add some extra cream cheese and some mexican cheese before serving. These were just a little bit bland, I am thinking next time I might add some taco seasoning or something. I think the corn, tomatoes or green chilies that people suggested would be good and I think the avocado would be nice too. To me these seemed like they would be appropriate to feed to kids. Sometimes we will make some recipes and I call them kiddy recipes, because they seem very kid friendly. I also think this would be a nice lunch item. It is super easy to make. My husband does most of the cooking, but I made these and he really liked them. I would give this recipe a try, but just now you might need to add some seasonings or spice. Oh, maybe more jalepenos would be good.

Radish Dip

Reviewed: Jun. 29, 2009
Everyone loves this recipe. We always make it for parties and we get lots of compliments. I've started calling it my "husband's famous radish dip" cause it has become quite well known. My husband decided to add dill to this recipe...not a good idea. We just need to find the perfect chips to go with it.

Grilled Radishes

Reviewed: Jun. 29, 2009
This was a pretty unique recipe and we are always looking for new ways to use radishes. I feel like something is missing, but I think this recipe could be incredible. I love garlic, but the garlic was a little overpowering. We will make this again, but need to figure out something to add. Maybe another spice or we thought this might be good mixed with some other vegetables.

Roasted Beets and Sauteed Beet Greens

Reviewed: Jun. 29, 2009
We were so happy when we found this recipe. We had no idea that you could eat the beet greens. We grow our own beets and it is great to use all of it. To me, the greens tasted a little bit like spinach. We basically followed the recipe exactly. We used red onions. I think next time we will make the amount of onions more equal to the amount of greens. The onions added a nice sweetness that balanced the greens.

Grilled Cilantro Salmon

Reviewed: Mar. 3, 2008
We are still searching for the perfect Salmon recipe, but this one is pretty good. I love cilantro, but the honey was a little overpowering. I think with some tweaking, this could be a keeper.

Creamy Pesto Shrimp

Reviewed: Mar. 3, 2008
One of the best recipes that I have found on this site. Really easy to make and very tasty. We bought fresh pink key west shrimp and I think that made all of the difference. It did take a little more time to peel and de-vein the shrimp though. We also used half & half instead of heavy cream it was still delicious.

Mexican Baked Fish

Reviewed: Mar. 3, 2008
I love mexican food. I thought this was a really good recipe and will make it again in the future. The cod itself is pretty bland, which is nice because it takes on the flavors of whatever you add to it. However,I wonder if the cod could be marinated in some of the salsa prior to give the actual fish more flavor. We used a mild Chipotle salsa which was great, we added fresh Cilantro, sour cream and because our avocados were really unripe, we made guacamole.

Spaghetti Squash I

Reviewed: Oct. 16, 2007
This is a really good recipe, I wasn't sure I would like it, but it is yummy. My only complaint is I think the cooking time needs to be increased, as well as the temperature. Depending on the size of the squash, 45 minutes to an hour at 400 to 450.

Eggplant Parmesan II

Reviewed: Oct. 16, 2007
We've made this recipe twice, the first time we cooked the eggplant forever and it never cooked all the way through. I think you have to bake the eggplant for 10 to 15 minutes per side before putting in the dish. The second time it turned out great except the cheese was a little too brown. Hopefully the third time is the charm.

Tasty, I've made this a few times with and without the blender and it tastes great either way.
