Slow Cooker Italian Beef

This is SO delicious!! I always have to double the recipe, b/c my husband could eat 4 sandwiches by himself!! I always use the juice from the pepperoncini's in the mixture. I serve on French rolls, w/ olive oil & garlic powder. We also put pepper jack cheese on the bread & put in broiler for 5 min before adding the meat. DELICIOUS!! This has become a regular dish in our house!

Salsa Chicken Burrito Filling

This was so delicious! After it was done in the slow cooker, I filled 8 tortillas w/ the chicken mixture, sour cream & cheese and put them in a large glass dish. I spread more salsa over the top & covered with more cheese. Cooked at 350 for about 20 min., until all the chees was melted & bubbly. SO GOOD!! My husband & best friend said they were some of the best burritos they'd ever eaten!! High praise coming from my husband, who LOVES Mexican food!!!

Ranch Crispy Chicken

My husband LOVED this chicken!! I did tweak the recipe a little, though... I used 2 pkgs. of ranch mix, italian bread crumbs (b/c that's all I had on hand), & I added onion powder, garlic powder, seasoned salt & pepper to the bread crumbs. I also coated the chicken with mayo before covering in the bread crumb mixture... it helped the chicken stay moist. It wasn't bland at all!! My only issue was cooking it on the cookie sheet w/o any cooking spray caused the breading to come off in places. I'll probably cook it the next time in a glass casserole dish. Otherwise, it was AWESOME!!!

Peanut Butter Cocoa No-Bake Cookies

Ummmmm, AWESOME!!! These cookies were SO good!! My mom used to make these when I was a kid & I loved them!! The only change I made was to use 1 C brown sugar & 1 C white sugar. I also used just a little more cocoa than called for. They set up perfectly and I made about 3 dozen. DELICIOUS!! I will definitely be making these on a regular basis!!!

Braised Balsamic Chicken

I LOVED this!! It was so delicious!! I only used 1/4 of a cup of balsamic vinegar, substituting the other 1/4 cup with chicken broth. I cubed my chicken, and used petite diced tomatoes w/ sweet onions. I served with whole grain brown rice I had cooked w/ the leftover chicken broth. It was so, so good. I'm not a big fan of balsamic vinegar, and I've never cooked with it, so I was skeptical that I would enjoy this dish, but I did. My husband and 2 picky kids loved it as well!! Great recipe, I will definitely be cooking this in the future!!

Walnut Pumpkin Pie

This was a nice change from a regular pumpkin pie. I'm not a huge pumpkin pie eater, but this was delicious!!! Even my husband, who hates pumpkin pie, loved it!!!

Grandma Ople's Apple Pie

This recipe was GREAT... and so easy!!! This was my first time to try an apple pie, and I was nervous b/c apple pie is my absolute favorite dessert. It was so simple and straightforward that there was no way to mess it up. I did add cinnamon, sugar, and nutmeg to the apples before putting them in the crust... other than that I didn't change anything. My husband loved this pie, and he doesn't even eat sweets!!! Even my cranky father-in-law loved it!! I would recommend this recipe to everyone and I will definitely be making it in the future!!!
