Slow Cooker Italian Beef
This is SO delicious!! I always have to double the recipe, b/c my husband could eat 4 sandwiches by himself!! I always use the juice from the pepperoncini's in the mixture. I serve on French rolls, w/ olive oil & garlic powder. We also put pepper jack cheese on the bread & put in broiler for 5 min before adding the meat. DELICIOUS!! This has become a regular dish in our house!

Salsa Chicken Burrito Filling
This was so delicious! After it was done in the slow cooker, I filled 8 tortillas w/ the chicken mixture, sour cream & cheese and put them in a large glass dish. I spread more salsa over the top & covered with more cheese. Cooked at 350 for about 20 min., until all the chees was melted & bubbly. SO GOOD!! My husband & best friend said they were some of the best burritos they'd ever eaten!! High praise coming from my husband, who LOVES Mexican food!!!

Ranch Crispy Chicken
My husband LOVED this chicken!! I did tweak the recipe a little, though... I used 2 pkgs. of ranch mix, italian bread crumbs (b/c that's all I had on hand), & I added onion powder, garlic powder, seasoned salt & pepper to the bread crumbs. I also coated the chicken with mayo before covering in the bread crumb mixture... it helped the chicken stay moist. It wasn't bland at all!! My only issue was cooking it on the cookie sheet w/o any cooking spray caused the breading to come off in places. I'll probably cook it the next time in a glass casserole dish. Otherwise, it was AWESOME!!!
