Italian Wedding Soup I

Reviewed: Mar. 17, 2011
Yummy soup, a little plain though. Next time i will do what another reviewer did and sautee onioms and garlic in pot before adding broth. Will also brown the balls. I used chicken stock instead of broth and skipped the Orzo since it doesn't really add much taste or nutrition. Used grass fed beef for the balls and panko for the breading.

Beets and Greens

Reviewed: Mar. 10, 2011
This recipe came out really good. I think it was missing something though - not sure what - just think that another complimentary flavor would have been beneficial. Maybe I will try with bacon grease next time instead of olive oil for sauteing the greens. Peeling the beets was tough after they were roasted because I had to do it with utensils instead of being able to hold them. I think next time I will try pealing them first. Or, maybe check to see if beat peals are edible, like potato peals... Thanks for the recipe! The kids and husband loved it.

Grilled or Fried Skirt Steak

Reviewed: Jan. 6, 2011
This came out excellent! I used a very nice skirt steak from a local farm that raises the cows on pasture. I didn't have quite 1/3 cup mustard but just used what I had. I marinated for about 2 hours. When I fried the steak, I used a cast iron skillet and medium heat. I made sure that the steak did not get much above medium rare. The meat was tender and so flavorful. The mustard taste paired great with the grass fed flavor of the steak. The mustard we used had horseradish in it which I think also added to the yumminess :) I served this with sweet potatoes that I had roasted with onions and garlic and then blended in a vita-mix to mashed-potatoe consistency and some swiss chard sauteed with onions. A wonderful meal!!!

Chocolate Mint Dessert Brownies

Reviewed: Dec. 21, 2010
I made these exactly as the recipe is written except I substituted 2 tablespoons of peppermint extract for the creme de menthe since these were going for a pre-school event. I also substituted rapadura for the white sugar just to try to cut down on the amount of refined ingrediants. They came out wonderful!! The brownies were very "brownie" like, not cakey at all. The frosting and shell seemed to be in good proportion to the brownie. I plan to make more of these for the holidays. Thanks so much for a great recipe!

Scalloped Potatoes II

Reviewed: Dec. 7, 2010
Excellent! Only change was I added some fresh ground pink peppercorns. The flavor from this simple combination of ingrdiants was so rich and tasty. Easy recipe to follow for such a great result. Other flavorings really are not necessary.

Radish Dip

Reviewed: Apr. 25, 2010
Excellent dip! I didn't follow the measurements too closely, just kind of eyeballed it. I used minced garlic from a jar instead of fresh to make it easier.

Jo's Rosemary Bread

Reviewed: Apr. 23, 2010
Very yummy! I thought the bread would be heavier but it came out nice and light. I had to substitute one of the cups of flour because I didn't have enough. I used half a cup of wheat and half a cup of rye. I also added vital wheat gluten. I think I need to tweak the mixture of spices just a little bit to make it even better for us.

Best Bread Machine Bread

Reviewed: Apr. 21, 2010
I made this recipe exactly as written and it came out wonderful. Plan to try again substituting some wheat flour next time and may also try throwing a little flax meal in there. I liked learning the different method of using the yeast and may try it with other recipes.

Wisconsin Five-Cheese Bake

Reviewed: Oct. 13, 2009
Yummy Yummy Yummy! I added cajun sausage and some italion bread crumbs that I had mixed with melted butter for the top. Didn't have italion seasoning so I used a mixture of oregeno, tyme and basil - probably a couple tablespoons in total - didn't measure.
