Excellent! I left out the lemon zest and juice. I like that this recipe makes a small batch because there are only 2 of us who like cheesecake. We ate these plain without a topping, and they were delicious.

The Big Easy Jambalaya

Spanish Rice

Very good. Substituted salsa for the fresh tomato because thats what I had on hand. Also left out celery. Worked well. Hubby who does not like rice couldnt stop eating it.

Easy Pesto

This was my first time making pesto. It was really easy. I was worried that the blender would not blend it properly but once the oil was added, it worked fine. I froze this for later use.

Chocolate Mint Candies Cookies

I made these for a wedding reception and they were a big hit. Made them smaller and only used half of a mint. A little time consuming but definitely worth it!

Creamy Pesto Chicken and Bow Ties

This was really, really good. The soup was overpowering but I added more pesto and that did the trick. Will skip the milk next time. Used leftover cooked chicken.

Easy Alfredo Sauce II

I had such high hopes for this one. The flavor was there and it was easy but the consistency did not work for me. I don't know if I did something wrong but it was too runny. And the leftover sauce hardened up in the fridge.

Frothy Eggnog

I loved this recipe. So much cheaper to make than to purchase pre-made eggnog! I made the recipe as stated, thought it was too thick with the whipped cream. Next time I added the heavy cream at the end but not whipped. Much better.

Simple Taco Soup

Only gave this 4 stars because I didnt have all of the ingredients. Used what I had, and it was delicious. Made homemade torilla chips to go along with the soup. Even better the next day!

Fried Chicken Tenders

I only gave this 4 stars because I made some adjustments. I did not have seasoned bread crumbs so I used plain and added my own herbs. I also added parmesan cheese into the bread crumbs which I would NOT recommend. The cheese gets too dark. I turned the fryer down to 365 and cooked for only 3 minutes. 6 minutes was way too long. I kept the finished ones in a warm oven while I fried the rest in small bataches.

Creamy Cheesecake

Delicious! This was very easy to make. I did not add the lemon and did also reduce the sugar. This was the first time my 14 yr old son tried cheesecake and LOVED it.

Fried Mozzarella Cheese Sticks

These were great. My boys like to order these when we eat out so they were amazed that I could make them at home. I took the advice of others and mixed the bread crumbs and flour mixtures and dipped twice. During the breading process be sure to keep one hand dry and the other wet. This is time consuming but my 14 year old helped with the frying while I finished the coating. Well worth it!

Super Easy Chicken Noodle Soup

Bodacious Broccoli Salad

I have a bunch of broccoli in the garden to use up so I thought I would try this. A bit too much vinegar for my taste. But it definately needs to be made in advance. Tastes much better the next day. I also added sunflower seeds.

Kielbasa Alfredo

This was pretty good. Not sure how the flavors would be together. But we love kielbasa and alfredo sauce separately so I decided to try it. Will definitely make again. This was a very quick meal!
