Simple Whole Wheat Bread

I used regular all-purpose white flour instead of bread flour (I didn't have any) and it was delicious! I borrowed my mother in law's Bosch mixer and let it knead on level 1 for about 8 minutes and ended up using about 3.5 cups whole wheat flour just as the recipe states. I let the dough rise in my oven with the light on and it took about an hour. I used two glass 9 inch loaf pans instead of three pans (time to buy another!) and cooked them together at 350 degrees for about 28 minutes. I made sure to brush them with butter and let them cool before cutting. Oh my goodness they were so good and moist, of course they made two very large sandwich loaves. Next time I will probably do three pans just so I can fit them in the freezer better if I want to freeze a loaf :)

Chewy Chocolate Chip Oatmeal Cookies

So good! I made changes most recommended like I did 1 1/2 cups flour, 1 tsp baking soda and I let the dough sit in the fridge for an hour or so. I also left out the nuts because no one in our house likes them. I do think because this recipe has so much butter in it, the cooling of the dough in the fridge really helped the cookies stay chewy and not flatten out too much when baked. I also did dark chocolate chips because thats all I had on hand. These really were the best oatmeal chocolate chip cookies I have ever made! Thanks :)

Baked Potato Soup

A really good recipe. My hubby said it tasted like it was from a restaurant. I started making it and then freaked out because I realized I was out of tabasco sauce! Instead I used a little cayenne pepper. It had the perfect zip to it. This was the perfect recipe for a snowy day! thanx!

Chicken Parmigiana

Very easy to make. I added parsley, salt and pepper to the plain bread crumbs. I didn't have chicken breast on hand so I used boneless skinless thighs and pound them down a little bit. I also didn't have eggs, so I dipped them in butter instead. I DID think the baking time was WAY too long. I only baked mine for 25 minutes alone, then added sauce and cheese and baked for 20 minutes more. Turned out nice and moist and not bit soggy at all. My husband and I loved this!

It's Chili by George!!

This is a really nice meaty chili. The biggest change I made was to add fresh tomatoes instead of canned- i didn't have any canned on hand but I think I liked the fresh better! Also, I cut down on the juice.

Downeast Maine Pumpkin Bread

I have tried many pumpkin bread recipes. This is hands down the best. I made it as is, except I didn't have veg oil so I used EVOO. It really is even better the next day! Do it!

Cake Mix Cookies VI

I didn't have any flour in my house, but I needed to make cookies. I did, however have a yellow butter cake mix, so I found this recipe and gave it a shot. Holy moly! First off, the raw dough is heaven sent. I baked my cookies for 9 1/2 minutes exactly and let them cool for about ten minutes. They were perfect, nice and moist. I think you can very easily experiment with these cookies! Next time I will try devil's food with PB chips. My mouth is watering. My hubby and his fellow students loved them! This was sooo much easier then making regular cookies too!

Basic Pasta

This was my first time making pasta and it was so yummy! And it really was easy. I just used a rolling pin and pizza cutter. Like most everyone, I did add a TB of Olive Oil and I let the dough rest for about 15 minutes after kneading. It made it much smoother. I didn't even let mine dry for very long, I just plopped it in some boiling water. For my sauce I made the "Lighter Fettuccini Alfredo" from this site. Yum

Truck-Stop Buttermilk Pancakes

Delicious! Here are the healthy options I did: Whole Wheat Flour, applesauce instead of butter, instead of buttermilk I used skim milk mixed with vinegar. But don't cut the sugar at all or the taste is ruined. And I added a little bit of vanilla extract to sweeten it up of course. I was worried that doing all these things would totally ruin it, but they didn't!

Baked Salmon Fillets Dijon

I used Grey Poupon and plain bread crumbs. I just sprinkled a little sage and thyme on the very top. These turned out great! My husband doesn't really like salmon, but he had seconds of this!
