Get a Husband Brunswick Stew
I prefer to use frozen cream style corn in my soups and stews rather than canned. A couple of those frozen "tubes" of corn will easily substitute for 3 cans, and you won't have that tin can taste screwing up what is otherwise a fine stew.

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)
This was delicious! I only had 1 can of coconut milk, so I skipped the sauce and I thought it was great anyway. I also added a pinch of ground cardamom to the finished rice before topping with mango slices and toasted sesame seeds. I thought it helped balance the sweetness and added an interesting little twist. Plus I need to find more ways to use the cardamom. It's one of those spices you almost never use, then when you get a recipe that calls for it, you forget you have it and buy another bottle. I have 3 almost full ones in my spice cabinet.

Peanuttiest Peanut Butter Cookies
Very pleased with how these cookies turned out! My husband ate 7 of them and he doesn't even like sweets! I found that chilling the dough in the fridge for 30 minutes helps to easily form the balls and keeps the cookies from spreading too flat in the oven. Also I used butterscotch chips instead of PB chips because that's what I had and they were still very good.
