Pressure Cooker Chicken with Duck Sauce

I was skeptical but desparate for a pressure cooker chicken recipe. It was great. I used dried ginger the first time because it was all that I had on hand. I added extra honey. As suggested, added the preserves, etc while the chicken was cooking. However, next time, I will double the sauce mix. Serve with rice. It is great!

Homemade Wonton Soup

As stated by many, this recipe makes a lot. Instead of freezing the prepared wontons, I divide the filling into three separate batches: I prepare one batch, and freeze the other two batches in separate ziploc containers.

Eat Michigan Salad

Excellent! (Although a Michigan State fan living in Kentucky, I thought it was appropriate =:)) So glad we tried it. Made it for Thanksgiving and everyone loved it. My mom specifically called and requested that I bring this for our Easter meal! Perfect anytime of the year.

Venison Tequila Chili

Excellent...I added a half of a bottle of Newcastle beer to it, as well as the tequila. I believe next time, I'll add some beef broth...it was just a little thick as written.

Garlic Chicken

Wonderful! I was concerned that it would not be spicy enough for our family so, I added Old Bay Seasoning and some red pepper flakes. Great! Additionally, I left this "simmering" on very low heat while I dripped the chicken (bone-in breasts and bone-in thighs). I used Italian seasoned bread crumbs because it was what I had on hand.

German Lentil Soup

Great recipe. Followed as written except added a little bit more of spices noted in the recipe and about double the celery. Cooked in slow cooker on low for 7 hours. Used about 9 cups of chicken broth that I prepared (I.e. broth from 4 chicken legs cooked with 3 quarts of water with salt, pepper, and sage that I cooked while prepping the other veggies)

Easy Pleasy Mac N Cheesy - US Navy Style

This was very good. I made with the sour cream but had to substitute other cheeses for Velveeta. I will make it again and follow directions, as written. I, too, am looking for a thinner, whiter "lunchroom" type of mac and cheese. As I prepared it, it wasn't exactly what I'm looking for.

Spinach Stuffed Chicken Breast

Did not marinate...did partially cook the bacon, saute the chicken and garlic in some of the bacon drippings, added the cheeses to the spinach mixture. It was excellent.

Beer Cheese Soup III

Absolutely wonderful! I make soups all of the time and this is going to be a keeper. I added two frozen bags of veggies: One of brocolli and one of cauliflower. I will probably just do the cauliflower the next time. The brocolli really breaks down while it sits and it looks more like brocolli soup than anything else. I also added two bottles of Newcastle beer and I added more potatoes. Very hearty dish! It's even better on the second day.

Wonderful Short Ribs

Super tender. Served over mashed potatoes. However, a little too much tomato taste for me (and I love tomato-based recipes). I thought that the tomato flavor overpowered the beef flavor. Will use this as a base recipe and tweak to more of our tastes. Thank you for sharing!

Excellent. Used lemon juice instead of lime....all I had. Used full amount of oil. Browned fish in a little butter in a cast iron skillet. Excellent.

Meatball Nirvana

Excellent...used with Best Marinara Sauce Yet (from this site). I made two substitutions in this recipe. I subbed 1/2 C ricotta cheese for the skim milk and instead of 1 pound of beef, I used 1/2 lb of beef and 1/2 lb of ground italian sausage (italian blend).

Best Marinara Sauce Yet

Made this with the Meatball Nirvana (this website...sub 1/2 C ricotta cheese for skim milk if you try it) and the combination was excellent. For this marinara, I did used crushed tomatoes instead of stewed and increased the herbs listed in recipe to suit our taste. The only other addition was a little cayene pepper to give it a little more kick but it complimented the sweet taste of the sauce. Excellent!

Delicious Chicken Casserole

Great, low maintenance weeknight meal. Often I try to wow the men in my family with something unique....but, they really prefer meals like this. Simple and good. Paired with salad, green beans, and carrots. Perfect!
