Baked Coconut Shrimp

Sadly, this wasn't so great by us. After going through all the work of deveining and peeling the shrimp, then getting them all individually rolled in the batter, I should have just bit the bullet and fried them. Baking them in the oven is just not the same, sorry. They tasted kind of bland and "cakey." We had a ton leftover because no one really loved them, so I melted some butter in a frying pan and reheated them the next day, then used them to make quesidillas, much better. Next time, I'll probably just go to Red Lobster during their shrimp fest or whatever it's called and enjoy their coconut shrimp without all the slime.

Grandma's Gingersnap Cookies

Good start for a gingersnap recipe. To make it healthier and even tastier, I used whole wheat flour and blackstrap molasses. Substituted 1/2 cup butter with applesauce, doubled the spices, and added about 1/4 cup flaxseed meal. Soooo hearty and yummy!

Quick Lemon Dijon Chicken

I cut the chicken up into bite-size pieces and dredged them in eggs & flour mixture before cooking to make it easier for my toddlers to eat. I also doubled the sauce, and used Herb de Province in place of the terragon, because that is what I had. Very tasty with rice pilaf.

Blackberry BBQ Sauce

This recipe is so easy and tasty. I threw everything in the crockpot and let it simmer for a few hours. I have also used marionberry jam, with success. I added just a small squirt of bbq sauce I had on hand, but it was surprisingly good without it too.

Coconut-Raisin Rice Pudding

I've made this twice now. The first time I didn't have any nutmeg so I put in just a little cinnamon. I think I liked that better than the nutmeg (personal preference). I left out the raisins, but added about a teaspoon of coconut extract. I also broiled it at the very end to toast the coconut a little more. Very easy and tasty.

Egg Noodles

Very good. I didn't worry about letting the noodles dry the second time I made this because they were very hard to get off the surface without destroying them. Be sure to roll them out as thin as possible. I cut them with a pizza cutter. I have also made them with whole wheat flour. I would suggest using 1/3 whole wheat, 2/3 white flour. Then they are hearty, but not too overpowering wheaty.

Chicken Noodle Soup

Lola's Horchata

Very nice and refreshing. I added just a little more milk than it calls for, and half a can of evaporated milk I had leftover. I think I 5x's the recipe. I probably drank about half of it. I just love horchata.

Kielbasa Bean Soup

This was very yummy. I threw everything but the zucchini in the crockpot and let it cook for about 4 hrs, then threw the zukes in for about an hour. I also used chicken sausage from Costco. Easy and good.

Slow Cooker Split Pea Sausage Soup

I've made this a couple of times now. I like to use spicy sausage. I also nearly double the veggies, and haven't used celery. We like it best when I blend 1/2 to 1/3 of the soup in the blender to make it a little creamier. I also cut back the water by a couple of cups. Very yummy!

Dijon-Tarragon Cream Chicken

This was very tasty. I took other reviewer's suggestions and dipped the chicken in a flour/seasoning salt/onion powder mixture before cooking. I didn't have any tarragon, so I just sprinkled in some herb de provence. It was quite tasty. Next time I will triple the sauce and serve with rice pilaf. Thanks for a good recipe!

Lemon Ice-Box Cake II

I followed the recipe pretty close and used real cream. I didn't use all of the filling because it was too much. The leftover mixture was really good as a spread on toast, bagels and banana bread. It stayed good in the fridge forever, like 2 weeks. yum yum.

Super yum! I added a can of coke...what the heck. Next time I will put the crockpot out on the back porch. The house smelled like meaty yumminess for a week! I used it for sandwiches, quesidillas and enchiladas. Sooo good, yo!
