All-Day Apple Butter

Great recipe. I tweaked it a bit by cutting the sugar by a cup and used a mix of brown and white sugar. I also added a 1/4 cup of honey and a 1/2 cup of Pinot Noir to give it a umpf.

Fluffy Pancakes

Yellow Cake Made from Scratch

This is a good cake base. You just have to play with the ingredients. I used 2 teaspoons of baking powder instead of 3, oil in place of shortening (it is a cake after all), and because I love vanilla, I used a tablespoon instead. I also am a little heavy handed with greasing the pan so not only was the cake more flavorful and moist with my changes, it popped out of the pan!

Easiest Teriyaki Marinade Ever

I would give it more stars but it was way to sweet and almost (emphasis on almost) defeats the purpose of dessert. If you don't want it that sweet, cut the sugar by half.

Cream Cheese Cookies I

Definitely use an entire 8oz block of cream cheese. Three ounces doesn't cut it. Also cut the flour back a bit. Makes all the difference.

Downeast Maine Pumpkin Bread

It was a good bread. Didn't have as much flavor as I would have expected - especially being in Downeast Maine. Next time, I'll increase the spice. I do like the versatility with the batter. I was able to make three loaves: regular, cran pumpkin and chocolate chip pumpkin.

Carrot Cake III

I don't like carrot cake...in fact, I can usually stand it. Decided to make this for my husband and my father and I'm really impressed. Not only did they love it...I did too. Who knew?

Big Soft Ginger Cookies

This is an incredible recipe. We had an open house for the local historical society and everyone wanted the recipe! Instead of rolling in sugar, I prepare a butter/powder sugar glaze and these cookies are an instant hit.

Easy Swedish Apple Pie

I love this recipe but it does get a bit bland if you follow the directions exactly. Luckily, I'm a cinnamon fanatic so I actually mix in a teaspoon of sugar (or Slenda) with a teaspoon of cinnamon in my apples. I also replace the 1 teaspoon of cinnamon with either a full tablespoon of cinnamon or 2 teaspoons of cinnamon with 1/3 teaspoon of nutmeg, and a teaspoon of vanilla. It gives more flavor. I also take a very small amount of the batter and spread it on the bottom of my pan to give it a cake-like crust before adding the apples to the pan.
