Turkey Tortilla Soup

My family loved this dish and it has made it into our "favorites." It is great for leftover turkey, but you could also just make it with cooked, diced chicken breast. Here are a few changes I made. I used whole milk instead of cream to cut down a bit on calories. I also added jalapeno, cilantro, and 2 minced garlic cloves to it while cooking, and added fresh-squeezed lime juice into the bowls just before serving.

Best Peach Cobbler Ever

It's okay, nothing spectacular. The peaches were the best part. It looks and tastes more like a bread pudding than a cobbler, and my family didn't believe me when I told them it was supposed to be cobbler. Tasted good, though.

Chocolate Lovers' Favorite Cake

This cake is truly outstanding! If you are wondering how it will turn out-- just make it! It is so easy, but SO GOOD! It tastes like a combination of a brownie and a cake. I used vanilla instead of almond abstract, and semisweet/white chocolate swirl chips instead of plain semisweet. I also used light sour cream and you could not tell at all that it was light! I would suggest leaving this cake in the pan after it cooks. It is so moist, it may fall apart on you if you try to take it out, even after it cools. It stays moist for several days, however! A phenomenal recipe-- one of the best on this website.

Cool Off Smoothie

Excellent recipe. I love that it has so many different fruits and that it is all natural. If you use very ripe strawberries and a very ripe banana, you should have no problem with this not being sweet enough.

Peanut Butter Cocoa No-Bake Cookies

I had an old version of this recipe once, but it was slightly different. I decided to try this one anyway, and it didn't turn out right... the proportions of sugar and cocoa are WAY off and too much peanut butter in this recipe encourages this recipe to clump up too soon and then to be too dry.

Grilled Baked Potatoes

There is not enough "marinade" for these potatoes as listed in the recipes, although it tastes delicious after cooking. I would suggest doubling the recipe.

Death by Chocolate

I was actually disappointed at how bland this was the first time I made it with all the good reviews. I expected it to be REALLY chocolate-y, but it wasn't, so I kicked it up the second time I made it and used a chocolate fudge cake INSTEAD of a german chocolate cake and used two boxes of pudding instead of one and that made all the difference in the world. I wouldn't call this "Death by Chocolate" the way it's currently written, but it's definitely okay and certainly can be modified in a lot of different ways to suit many tastes.

This is excellent with chicken kabobs. I use premium dark soy sauce that you find at an Asian grocery and add lime juice. Yum!

Chicken Rice Mexicana

This recipe was just okay. There was way too much rice in it, which made it taste a little bland. After you cook the rice and the chicken mixture, it's basically finished. You don't need to bake it in layers with the cheese on top IF you are going to put it in tortillas as the recipe suggests-- it just adds cooking time and not much else. You can instead, mix some rice in with the chicken mixture (not as much as recipe suggests), put in tortillas, and put shredded cheese on top.

Betty's Best Hot Chicken Salad

This recipe is way too rich as is-- tons of mayonnaise, salty cashews and chips, cheddar cheese. It almost made me sick an hour after I ate it. Although the meal is flavorful if you like chicken salad, I would reduce the amount of mayonnaise by A LOT before making this again! The other liquid ingredients (including the melted cheese) will make up for the lost mayonnaise.

Grandma's Slow Cooker Vegetarian Chili

At first, after adding all of the ingredients, I thought this was going to be a big mess, but it turned out so tasty I wanted to make it again the next week. We added some red pepper flakes and some ground turkey the next time we made it and we were in heaven.

Hawaiian Sandwiches

An interesting combination... even better when you vary the type of bread used and use Turkey bacon instead (it doesn't make the bread as greasy). It's a little like Hawaiian pizza without the sauce.

Iced Mochas
