I made this quiche for company as a labor day "brunch" item. It was a huge hit. It proves you do not need crust. I took some tips from others and cut the cheese to 2 cups using 1 1/4c organic shredded cheddar and 3/4c ff cottage cheese. The cottage cheese gives a more creamy texture. To cut some more calories I used 3 egg beaters and 2 organic eggs. I sauteed the leeks ( little zestier than onions), fresh organic spinach and arugala chopped, and shitake mushroms in Organic Pam with some chopped garlic. Seasoning the mixture with red pepper flakes, ground lemon pepper and garlic powder puts in the final touch. I suggest serving it with a freshly baked breakfast bread ( I baked apple/cinnamon) and a fresh fruit salad. This will wow your guests.
