Easy Valentine Sandwich Cookies

I think the trick is in the confectioner's sugar. Flakey and delicious cookies. I used confectioner's sugar when I rolled them out, instead of flour. I used lemon extract instead of almond (in case of allergies). Next time I would use more lemon extract because it was hard to taste in the cookies. (its not as strong as almond extract tho. Next time I would probably just squeeze a lemon in there if I had one).

Warm Bok Choy, Beet and Feta Salad

Great way to use beets and bok choy. Also very pretty. I used mini bok choy and garnished the dish with the cut off ends - they looked like flowers.

Rainbow Salad

I mean yeah, it's just jello. But it's pretty and festive, and it does take a lot of work to wait in between each color, and it can be challenging in a small kitchen with little room in the refrigerator. So, no shame in this dish!

Paneer

This recipe worked, the paneer separated nicely, and I was left with gorgeous green whey, which is what I was really after. I did fry them, I followed all of the original recipe writer's directions in the comments. I ended up with gorgeous, squeaky little paneers. I don't actually like paneer, but if I did, I would like this. I might personally rather skip the frying and put it in calzones or lasagna like ricotta. I really like that the whey comes out pure with this recipe.

Cheesy Quinoa Pilaf with Spinach

I didn't actually have quinoa, but I did make this recipe using Barley (I know, I know, different family and everything). I also used frozen spinach rather than fresh, which worked just fine. It was very delicious, and I'm looking forward to trying it with Quinoa soon! The sunflowers made it nutty and the gouda made it smoky. Yum!

Vegan Cheesecake

I always cook it for 30 min and place it directly in the fridge. It is golden brown on top and firms up. I have made this several ways - thick with coconut, peanut buttery, adding chocolate syrup. Often I end up putting in extra maple syrup. I have loved this recipe for years. It was even a huge part of my identity my freshman year of college. I made at least one a week and often brought it to the dinning hall to share. (While Salisbury University did a great job on meals, there wasn't much in the way of vegan desserts in 2001)

Slow Cooker Honey Garlic Chicken

Delicious! I did not cook the chicken ahead of time, this particular recipe may actually be improved (in texture and flavor) by skipping that step. I mixed all that stuff up right in the crock pot, put in the chicken, followed another reviewer's advice to put it on high 2 hours & low one hour and the results are delicious! I'd say the pineapple is not optional. It's like Chinese food, but better because I know everything that went in it! (Like low sodium soy sauce and no MSG)

Slow Cooker Butter Chicken

Like indian food cooked itself in my kitchen...delicious! I followed the recipe to a T, except I ended up using chili paste instead of curry paste-just subbed it right in there. Spiced it up a bit, but not so much that I couldn't taste the complexity of flavors, would probably do it again on purpose :)

Chocolate Cut Out Cookies

Full chocolate taste. I rolled the dough to 1/4" thickness between two pieces of waxed paper, put it in the refrigerator that way for less than 20 minutes and took it out and it was ready for cookie cutters. No problem! No mess. No dilution from flour/sugar/cocoa powder.

Indian Chicken Curry II

It was fine. The family thought it was delicious. I toned it down a little on the spiciness knowing that my dad and my nephew are not into spicy food. Dad usually grumbles through anything indian. I just used maybe half of the curry powder and didn't add any Cayenne or lemon juice. I served it with banana raita from the moosewood cookbook. mmmm

Ground Beef Wellington

This was a great recipe. I followed some of the other reviewer suggestions, such as using onion soup mix. And the campbell's golden mushroom soup in the sauce. I'm looking forward to making them again, but stuffing them with beef and mushrooms, or with ground turkey and dried fruit. So many possibilities, so excited about this convenient little meat package :)

Honey Baked Chicken II

This recipe is delicious! I have made it a couple times because it was so good the first time. I used chicken breasts, which came out juicy and tender. I did add garlic and sliced 2 small onions very thin with a mandolin and draped them over the whole top layer of the chicken. I served it with basmati rice. Again, Delicious!

Raspberry Chocolate Supremes

My friends really enjoyed these bars and all asked for the recipe. I would have liked the crust to have been a little less crumbly. More or less exactly what I had in mind when I was looking to make raspberry bars - I made them again, but used chocolate chip cookie dough as the crust. Delicious and chewy.

Carrot Burgers

These were super! Very pleasant flavor, very flavorful! I did only use half of the breadcrumbs, as suggested by others. I also held the patty in one hand, and sprinkled the crushed cereal on, then turned it on to the other hand and sprinkled crushed cereal on the other side rather than dipping. When cooked, they were delicious, firm, flavorful patties! My husband was impressed by them too.

Fresh Tomato Salad

This salad is healthy and delicious! Usually raw onions bother my husband and I, but the vinegar must have neutralized them. We both enjoyed this healthy side.
