Butternut Squash Casserole

I changed the sugar to 3/4 cup and added a 5 ounce package of chopped pecans to the topping. I will make this again and again! I roasted the squash as recommended but an FYI, to peel raw squash, I cut it in half and use my veggie peeler THEN cube it. So much easier!

Baked Potato Soup

This deserves 6 stars! This is by far the best potato soup out there. The hot pepper sauce adds a great unexpected kick, but it's not really hot. I put some of the crumbled bacon in the soup to cook and added a little shredded cheddar, then topped it off with both to serve. Trust me, double the recipe! It's fantastic the next day as well. I can't wait to make it again!

Best Chocolate Chip Cookies

I love cookies, it's my weakness. So when I see a recipe that has been tried over 1000 times and it still has 4 1/2 stars, I thought this was a recipe sent from heaven. I truly did not see what the big deal was. They were good (what cookie isn't?). They were definitely not the best. I brought them to work and felt like I had to explain myself every time someone took one. I followed the recipe almost exactly except I added an extra teaspoon of vanilla. I think I will stick to the recipe on the back of the bag. It's never done me wrong.

Grilled Marinated Shrimp

OMG! By far the best shrimp recipe I have found. The only change I made was I used Ketchup instead of the tomato paste. I think it adds a little sweetness to balance the spice of the hot sauce. Marinating for an hour or two is key. I've made them three times in the past two weeks. Perfect!

Buzzsaw's BBQ Sauce

I just love this sauce! The only change I make is I use a good balsamic vinegar instead of regular vinegar. It just has a better flavor and doesn't have that strong vinegar taste. I also like a sweeter sauce so I add a little bit more molasses. I haven't bought barbeque sauce since I found this recipe.

Mom's Zucchini Bread

No need to change ANYTHING! This is the best Zucchini Bread recipe out there. This makes two big loaf pans of yummy, moist bread. I always intend on putting one of them in the freezer but it just never makes it there!

Sweet Coated Pecans

OMG! I made these to give away in gift boxes with some cookies...I think I ate half of them. Warning! Do not taste test when they are warm unless you plan on making another batch! Definitely cook on aluminum foil to help with cleanup.

Wonderful Short Ribs

I have never had short ribs before, let alone cook them. They really do have a great flavor. I put all of the ingredients in a slow cooker and cooked on low for about 8-9 hours (during work). Can't wait to make again!

Fish Tacos

WOW! These are so good! The sauce is completely addictive. I used fresh cilantro in place of the oregano and it added a great freshness to the sauce. Everyone really liked these. Will definitely make again!

White Chili

My family and I really liked this. I did make some additions just for personal taste. I started off with 1/4 of a large onion and 1 clove of minced garlic sauteed before I browned the meat. I also used ground chicken as this was what I had. Also, I added about 1/2 to 1 teaspoon cumin during cooking because I really like the smoky taste it adds. I didn't have cheddar with jalapenos so I just used regular cheddar. Lastly, I added fresh chopped cilantro at the end, just before serving. I think it's a great starting point and you can really personalize it to your liking.

Really Creamy Fettuccine Alfredo

I give this 5 stars with the adjustments I made. I didn't have any milk left so I used half and half, used butter instead of margarine because I only had spread or butter and wasn't sure if spread would melt well, I also added minced garlic and green onions. Also forgot the nutmeg...oops! So I managed to make it WAY more fattening but it sure was tasty!

Marinade for Steak I

Oh My! This is by far the best marinade on the planet! I made it once and froze half to use again. Well I used the rest tonight on some sirloin steak tips and it was FABULOUS! I was moaning after each bite. Wouldn't change a thing...I will never use another marinade.

Super-Delicious Zuppa Toscana

This soup is really good but there is a FANTASTIC recipe for baked potato soup on this site that has the same consistency. I think next time I will use the baked potato soup recipe and just add in the sausage and spinach. The ultimate comfort soup!

Grilled Bacon Jalapeno Wraps

Beware! These are so addictive! I usually double this recipe and add shredded cheddar cheese and minced garlic to the cream cheese (I never measure so I don't know how much). To ease cleaning of the peppers, I cut them in half and use a small spoon to scrape out the seeds and most of the membrane. I also grill them on a pan to keep the bacon from charring.

Mexican Pork Chops

So I don't usually stray too much from the recipe in front of me but I was looking for a way to use pork in say, a taco or quesadilla. Here's what I did: I took 4 boneless pork chops and cubed into 1/2-1 inch pieces. Browned these slightly on the stove then added 1 can petite diced tomatoes, 1 can diced chiles, 1/2 large browned onion, 1 teaspoons minced garlic, 1 can drained/rinsed black beans, 1 teaspoon cumin and 1 pkg success white rice (out of the bag, of course!) and cooked until the rice was done. I added about a cup of water total as it was cooking as well. SOO good.

Scott Ure's Clams And Garlic

These were very good. My 4 year old son LOVED them. Steamers have always been a regular thing here since we live right on the NH seacoast but we usually just steam them with water, nothing fancy... Just dipped in clarified butter. These were so great, I will never make them any other way again. I used steamers bought at the grocery store because everyone else was closed but next time I will get them nice and fresh from the fish market.

Oven Fried Chicken II

This recipe was good. I liked how the chicken wasn't super greasy. No mess to clean up was a bonus! I used boneless skinless chicken thighs so the cooking time was cut down a little.
