Restaurant-Style Chicken Scampi

I decided to follow sweetie pies review almost exactly but didn't have white wine so I used half sherry and half chicken stock. It was "almost" like olive gardens chicken scampi but was missing something...maybe needed more garlic (is that possible?). It was FANTASTIC, nonetheless.

Marinated Pork Tenderloin

This is autumn comfort food at its finest! I used the leftover marinade to make a sauce. I brought the marinade to a boil then added some cornstarch diluted in water. I couldn't stop "taste testing it"! Next time I make this, I am going to try it in the oven because I think the flavor of the marinade will be more prominent and not quite as covered by the grill flavor. This will be great with warm homemade applesauce...Mmmm!

Berry Shooters

Made "margarita" shooters (tequila with lime jello), grape jello with vodka, and tropical fruit jello with pineapple rum. These were great. Felt bad for the person that ate all the margarita ones! They were pretty dangerous...

Made this for our annual Halloween party. Everyone loved it. I don't really eat a lot of chocolate but tried a small piece. VERY CHOCOLATEY for me but good with a huge glass of milk.

Creamy Rice Pudding

WOW, this was so good and easy. I left out the raisins because I actually don't like raisins in my rice pudding. I also used a short grain arborio rice. Even my husband ate it and he "isn't a fan of rice pudding".

This was super tasty but a bit messy...just as it said. I ended up putting it in a graham cracker crust and freezing it. When it was time to eat, I thawed it for a few minutes on the counter. This was actually a bit more enjoyable. Oh yeah, I used sliced strawberries for the fruit...

This recipe was good. I liked how the chicken wasn't super greasy. No mess to clean up was a bonus! I used boneless skinless chicken thighs so the cooking time was cut down a little.

Scott Ure's Clams And Garlic

These were very good. My 4 year old son LOVED them. Steamers have always been a regular thing here since we live right on the NH seacoast but we usually just steam them with water, nothing fancy... Just dipped in clarified butter. These were so great, I will never make them any other way again. I used steamers bought at the grocery store because everyone else was closed but next time I will get them nice and fresh from the fish market.

Mexican Pork Chops

So I don't usually stray too much from the recipe in front of me but I was looking for a way to use pork in say, a taco or quesadilla. Here's what I did: I took 4 boneless pork chops and cubed into 1/2-1 inch pieces. Browned these slightly on the stove then added 1 can petite diced tomatoes, 1 can diced chiles, 1/2 large browned onion, 1 teaspoons minced garlic, 1 can drained/rinsed black beans, 1 teaspoon cumin and 1 pkg success white rice (out of the bag, of course!) and cooked until the rice was done. I added about a cup of water total as it was cooking as well. SOO good.

I make something similar to these using phyllo shells, shredded mozzarella, diced fresh tomatoes, lots of garlic, and of course the mayo. They are fantastic.

Grilled Bacon Jalapeno Wraps

Beware! These are so addictive! I usually double this recipe and add shredded cheddar cheese and minced garlic to the cream cheese (I never measure so I don't know how much). To ease cleaning of the peppers, I cut them in half and use a small spoon to scrape out the seeds and most of the membrane. I also grill them on a pan to keep the bacon from charring.

Super-Delicious Zuppa Toscana

This soup is really good but there is a FANTASTIC recipe for baked potato soup on this site that has the same consistency. I think next time I will use the baked potato soup recipe and just add in the sausage and spinach. The ultimate comfort soup!

Marinade for Steak I

Oh My! This is by far the best marinade on the planet! I made it once and froze half to use again. Well I used the rest tonight on some sirloin steak tips and it was FABULOUS! I was moaning after each bite. Wouldn't change a thing...I will never use another marinade.

Really Creamy Fettuccine Alfredo

I give this 5 stars with the adjustments I made. I didn't have any milk left so I used half and half, used butter instead of margarine because I only had spread or butter and wasn't sure if spread would melt well, I also added minced garlic and green onions. Also forgot the nutmeg...oops! So I managed to make it WAY more fattening but it sure was tasty!

White Chili

My family and I really liked this. I did make some additions just for personal taste. I started off with 1/4 of a large onion and 1 clove of minced garlic sauteed before I browned the meat. I also used ground chicken as this was what I had. Also, I added about 1/2 to 1 teaspoon cumin during cooking because I really like the smoky taste it adds. I didn't have cheddar with jalapenos so I just used regular cheddar. Lastly, I added fresh chopped cilantro at the end, just before serving. I think it's a great starting point and you can really personalize it to your liking.

WOW! These are so good! The sauce is completely addictive. I used fresh cilantro in place of the oregano and it added a great freshness to the sauce. Everyone really liked these. Will definitely make again!

Wonderful Short Ribs

I have never had short ribs before, let alone cook them. They really do have a great flavor. I put all of the ingredients in a slow cooker and cooked on low for about 8-9 hours (during work). Can't wait to make again!
