I am 34 years old, married with 2 children, ages 5 and 3. I enjoy cooking, gardening, having fun with my family and friends, camping, and eating great food. I also love going on vacation to Disney World. My dream trips would be to see the Amazon forest, going to Africa and Madagascar.
My favorite things to cook
My favorite recipes are soups and anything italian. I enjoy summer grilling as well. I love to just whip up meals but I never measure anything so I am not very good at making a recipe. Cookies are always fun to make too!
My favorite family cooking traditions
I don't really have any traditions yet. I'm getting really good at grilling during the summer and friends like to come over for dinner when I make scallops with bacon and my spicy shrimp skewers on the grill...
My cooking triumphs
Learning to cook! My husband reminds me how I used to only cook frozen and prepared heat and serve meals when we first moved in together. Now I will try anything at least once. I have no fear of any dish now.
My cooking tragedies
I recently made baked potato soup from this website. I've made it a number of times for my family but this time I was bringing it to work for a food day. I left it on the stove to cool down before refrigerating and fell asleep on the couch. I woke up the next morning with a huge pot of yucky cold blob reminiscent of what was a delicious soup just 8 hours prior. Also I really stink at making any type of beef roast. I always overcook it. I guess I'll just keep trying...

Cajun Shrimp Orecchiette
Alright, so I tweaked this recipe a bunch and it turned out amazing! To start, I did not have shallots so I used a half a vidalia onion. Used half butter and half olive oil, and halved grape tomatoes instead of the plum tomatoes. I also used cubed chicken breast instead of shrimp because that's what I had. Lastly I added another cup of pasta because it didn't seem like enough. I added the chicken after cooking the onions, etc for a bit then added the wine and tomatoes a minute or two before adding the pasta and spinach. Topped with fresh grated parmesan...It was SOO good and nice and light. I can't wait to eat the leftovers!

Pineapple-Lime Rice
Yum!!! As per other reviews, I added a cup of water and a cup of pineapple juice. I actually needed to add a bit more water (1/2 cup or so) about halfway into cooking which didn't seem to change the outcome. I made this along with the Key West chicken on this site and it was a great combination.

Asian Lettuce Wraps
So so good! I follow this recipe "almost" exact except I use ground chicken instead of beef (Its just a bit lighter tasting), fresh ginger instead of pickled...about 1 tablespoon or so through the microplane. I make a peanut hoisin sauce to drizzle over the top. Heat over medium heat equal parts (or so, to taste) hoisin sauce, peanut butter and water. Amazing!
