Pumpkin Muffins with Streusel Topping

Reviewed: Oct. 3, 2012
This is a great recipe! I only used oil simply because I didn't have any applesauce on hand. Muffins were super light and fluffy and more importantly super tasty! I was planning on making double topping from other reviews but am glad I forgot. I figured i'd make more if i needed it, but I actually had some topping left over using the original measurements. I left out the raisins as my family isn't big on them, but i'm sure they would be a delightful addition. Looking forward to making again and again adding new flares and flavors. Happy baking/cooking!

Microwave Chocolate Cake

Wonderful! Made as is...except did not make the sauce, was craving caramel instead so I made a simple caramel peanut butter sauce instead. Fantastic with or without the sauce!

Butternut Squash Supreme

Reviewed: Nov. 21, 2011
This was pretty good. I like to give the original recipe a shot before i tweak it but I did sautee the onions before adding and i used half butternut squash and half acorn squash because that is what i had in my fridge left over from another recipe a couple days before. It was very tasty and my husband enjoyed it. Only thing i'd do different next time is while mashing up the squash i'd at a little salt and pepper. I had to add it to mine table side but overall very good side dish.

Very good!! Instead of adding cayenne and hot sauce i put in just a tiny bit of garlic chili paste, served dish over rice. Was wonderful, will definately be making again!

Quick Quiche

Reviewed: Sep. 15, 2008
YUMMY!! Only thing i did different was saute the onions before putting them in, and i had to cook a lot longer than the recipe specified but it was definately worth the wait, can't wait to make again and again trying new fillings!

Orange Sour Cream Muffins

Reviewed: Sep. 12, 2008
These were okay, but not what i was expecting, which is why i gave only a three star rating. They tasted and had the texture more like a cupcake than a muffin and did not come out very pretty (almost every single one fell in...)

Delicious Healthy Strawberry Shake

Reviewed: Aug. 1, 2008
this was great, i didn't expect it to be a restaurant version of a shake...because i was looking for a HEALTHY way to enjoy my frozen strawberrys, but still enjoy them. I thought this was good and decided to try the recipe exactly as it is written even with all the reviews urging change. Only thing i did was put it in the freezer for a couple of minutes to get icy..(but i do that with most milkshakes i make) thank you for this delicious strawberry shake!

Chocolate Chip Pancakes

Reviewed: May 14, 2008
These pancakes are AMAZING!!! Not only do they turn out beautiful and fluffy everytime but they taste wonderful! We usually omit the chocolate chips and the syurp listed but we make these all the time. I do add a splash of vanilla (thanks to one reviewer). I have shared this recipe with so many people they love my pancakes and i just can't steal all the credit...although i wish i could! I have found they do better if you whisk all of the wet ingredients togegther prior to putting them in with the dry ingredients, not sure why that helps...but they are amazing!! Thanks!!

Orange Spiced Chicken

Reviewed: May 14, 2008
I like so many others switched the oj and soy sauce amounts. I also added a little bit of garlic chili paste to spice it up a bit. I was really disappointed with the dish, had higher expectations...That being said, it wasn't terrible, but i do think it would have been much better if marinated and then grilled. (cooking it in the oven i think was the killer for me) the marinade tasted good and even smelled wonderful cooking, but the overall end result...disappointing.

Over all pretty good! Due to recommendations by others i left out the cornmeal from the dough and sprinkled in a very thin layer of cheese over the sausage.

Marinated Chicken Kabobs

Reviewed: Feb. 13, 2008
This was a great kabob recipe! Thank you so much. I added zucchini to the list of veggies since i had it on hand. Turned out great! It didn't mention marinating the veggies so i tossed them in olive oil prior to placing on the kabobs but other wise i followed the recipe word for word. (i did squeeze the lemon juice fresh) We served over white rice and was great!

Black Bean and Rice Enchiladas

Great recipe! We usually add a can of corn to the mixture really adds to the flavor, sometimes we substitute the rice for browned ground beef or use both! A definate hit in our home!
