Chicken Vesuvio
The flavors of this recipe were very good, but the chicken came out a bit dry. I was surprised chicken breasts really need to cook a full hour at 400 degrees. Next time I'd be sure to use a much larger baking pan so the chicken and potatoes could be more spread out and actually roast. My husband suggested using thighs instead. I also added more potatoes and mushrooms to make it more of "meal"

Pork Tenderloin alla Napoli
I followed the recipe (no substitutions) and I thought it was great! I'd definitely make it again. I found after 30 minutes in the oven the tenderloin only registered 150 degrees. But I left it to rest, covered with foil while I finished the sauce. It was tender and moist.

Quick Cassoulet
This was quite tasty, although I would really call it a faux cassoulet. It's certainly a healthy alternative and quick and easy. I used lean turkey smoked sausage and added about a half teaspoon of herbs de provence. You also might need to add a little liquid with the beans and tomatoes if you use the turkey sausage. A great family friendly meal!
