Ultimate Irresistible Granola

Very delicious. I decreased the oil by alot. I also substituted brown sugar for the honey and left out the cranberries b/c I didn't have any. Thanks for sharing

Shrimp and Feta Cheese Pasta

Very good recipe. I added alot more garlic b/c we love garlic ! Followed the rest of the recipe closely with the exception of adding about 2 cups of broth. We don't like our pasta too dry. I also added a handful of cut leaf spinach just to give it a little color. This is a very easy recipe. I didn't have fresh tomatoes so I had to use 1 can of petite diced tomatoes. You could also kick it up by adding some red pepper flakes and parmesan cheese. Thanks for sharing.

Slow Cooker Lasagna

I'm giving this recipe 5 Stars because I have always been intimidated to make lasagna for some reason. This is really a fool proof recipe. It's very forgiving and delicious. I followed the instructions of a previous reviewer who suggested adding equal parts of water to your sauce. If you don't do this it will burn for sure. I put the lasagna together the day before and put it in the crockpot the following day. My lasagna only took about 4 hours on high. You can really custom make this to your own preference. Adding various vegetables or different types of meats such as ground turkey, sausage, etc. This recipe made a ton for me. My crockpot is very big and I have enough leftovers for 6-8 people ! Corn Chowder

Very good and easy to make. I followed the advice of previous reviewers and used chicken broth instead of water. I also used heavy cream in place of some of the milk. I pureed about 4 cups in the blender to make it creamier. I added some whole sweet corn to give the chowder more texture. Before serving I garnished with a dollop of sour cream, cheddar cheese and some bacon. Very good. I made about 12 servings so I could have leftovers. Thanks for sharing !

White Bean Fennel Soup

Super easy and delicious. I sauteed the onions with about 4 small cloves of garlic in some olive oil. I also threw in some finely chopped celery (about 2 of the tender stalks) I chopped the fennel finely and added it to the pot. Added the tomatoes (without draining) and cooked a few more minutes. Added 2 Cans of white beans and then I added the broth (About 6 cups). I pressure cooked it for about 10 minutes and then once it was done I added some frozen spinach (about 2 cups) and 1 can of sliced carrots. This soup was sooo good. Not boring at all. The fennel blended in very well. It did not over power the soup. We are big soup eaters in our home and everyone loved this one, even my 8 year old. I will certainly be making this again. This soup can be topped with a little parmesan or a drizzle of olive oil. You can also add some small pasta such as ditalini to make it a bit heartier. Edit~ I've made this many many more times and have experimented with adding different veggies to this...zucchini, peas and escarole and it is always fabulous ! (4/26/2011)

Chicken Enchiladas

Very good and super easy. This is a great recipe to make ahead of time and you just pop it in the oven. I used leftover shredded chicken from a rotisserie chicken we had the day before. I also added one can of condensed cheddar cheese soup in with 3 cans of enchilada sauce. I dip the tortillas in the enchilada sauce first and then fill and roll up. It makes it easier to roll the corn tortillas, since they tend to crack if you don't do that. I also added one can of black beans to the chicken mixture. It stretched the chicken and made more enchiladas. Next time I will also add a can of corn (drained). We have a big family so stretching our dollar is very important. I topped with the remainin enchilada sauce and cheddar cheese and baked. When they came out of the oven we served with sour cream and hot sauce. You can also garnish with olives and green onion. This is a go to recipe when I need to either make a quick meal or I need to make meals ahead of time in the event we're having a busy week.

Penne Pasta with Cannellini Beans and Escarole

This was horrible. I sauteed an onion and a few garlic cloves added the escarole. I cooked the cannellini beans in some chicken broth (about 1 cup) because some reviewers commented on the beans being too hard. I added the tomatoes to the onion/garlic mixture tossed in the beans with the broth and tossed it all with the pasta. I'm not sure what it was. But the beans and pasta mixture was gross. I really expected more from this recipe and even with my additions it was way too bland. We like a little more flavor in our food. I feel like I wasted some good escarole on this recipe. I added a ton of red pepper flakes and parmesan cheese just to get thru eating it. Won't make again. Sorry.

Zucchini Bread IV

Wow, Wow, Wow,...I've been making zucchini bread for about 15 years. This is by far the best recipe I've come across. I followed it to an absolute T. I made 1 loaf with it and the rest of the batter I made into mini mini muffins. My kids devoured the muffins within minutes of making it. This recipe is awesome. Very moist and I will be making this super simple tasty bread again. I did add brown sugar to the tops of the loaf and muffins before throwing it in the oven. Thank You !!!

Olive Pecan Spread

I've made this twice already and it's wonderful. It's best when you let it rest in the fridge for a little bit. The flavors marry nicely together. I also used the olives with the pimento in it. We like to drink dirty martinis and we always have a ton of olives leftover since we only use the olive juice. It's nice to find a recipe to use up ALL those olives in. We serve on water crackers. Perfection !

Chicken and Biscuit Casserole

Really good casserole. I also added poultry seasoning and used heavy cream and 2 small potatoes to thicken it up a bit. I did not use flour. I used cornstarch instead. I did not add any sugar . All in all it was very good. Next time I will not add basil to the dumplings. I found the basil too overpowering.**EDIT** Made again on 3/15/11 ~ Made this on the stove top did not put into oven at all. I used leftovers from a roasted chicken I made a couple of nights ago. Took all the meat off the bones and chopped up and threw into the pot. The additional flavors from the roasted chicken really add a nice level of flavor to the whole meal. Also, I used a dumpling recipe from the Bisquick box and topped the chicken stew with those instead of baking biscuits in the oven. Really preferred it this way. Again I did not add any sugar and added a bit more broth as to make it soupier. Still very good blend of ingredients and sooo comforting on a cold winters day. Thanks Again !!!

Brown Sugar Banana Nut Bread I

Very good and easy recipe but I felt it wasn't sweet enough. I added only 3 bananas and maybe that had something to do with it. It's a very good recipe and I will make it again but next time I will add a little bit of white sugar to the mix. I also took the suggestion from someone else and added 1/4 cup of sour cream. Added brown sugar to the top and some oats to give it a little crunch.

Chicken Tortilla Soup II

Good recipe. Instead of the spices I just used 1 1/2 packages of taco seasoning. I also used 1 14 oz can of Rotel tomatoes with chiles. I also used leftover chicken I had from some chicken soup I made. I saute'd an onion , added tortillas, chicken, taco seasoning, tomatoes, broth. I added a can of corn and a can of beans to make the soup a little bit thicker. This is a good base but could be great with some additions. I would give it 3 without my tweaking. With my tweaking I'd say it's a 5.

Pumpkin Bread

I only gave this a 3 because it was somewhat soggy. I halved the recipe and made muffins with the batter. I added pecans to the mix. The muffins were very tasty but too moist. If that's possible. The tops of the muffins were some what doughy. Not sure why. Maybe It was something I did. I did check them with a toothpick before getting them out of the oven.

Reuben Casserole

Followed the recipe almost to a T. It was pretty good although my kids weren't too thrilled with it. My husband really liked it but thought it needed some mustard. I toasted some rye bread cubes and topped the casserole with them so it wouldn't be so soggy. Turn out good. Super simple to make. Not sure I would make it again since the kids wouldn't eat it. I did find it a tiny bit salty. Not sure why. I forgot to rinse the sauerkraut. Not sure if that had anything to do with it.

Shrimp Scampi III

Very good scampi recipe. I've made scampi before but not very well. What I did was add alot of garlic in the butter... sauteed and kept the garlic in. I used at least 6 cloves. Sauteed the shrimp added the white wine and then added some chicken broth because we like our pasta a little bit soupier as opposed to dry. Added a little less bread crumbs and also added some lemon juice. Used spaghetti because I didn't have any angel hair. Also added red pepper seeds to my own individual plate b/c I like it a little bit spicy. The key is to cook the shrimp for only a few minutes. The longer you cook it the toughter it gets. You can even under cook it a bit and it will continue to cook after you add it to the hot pasta. Sprinkle the whole thing with parmesan and it'll be perfect. My Mom puts her scampi in the broiler and then tosses it with the pasta. I didn't do that.

Chunky Blue Cheese Dressing

Really easy and tasty dressing. Here is what I did...I substituted the sour cream with plain fat free yogurt and I doubled the crumbled bleu cheese. We used this for dip for our Buffalo Wings. I also Did Not use a blender. I wanted it a bit chunky and it turned out really well. I also only made enough for 10 servings and it was plenty for what I needed it for. Will use this recipe again. Thanks for sharing !!!

D's Famous Salsa

Wow. Very delicious. I could eat the whole bowl. I followed Auntie June's recommendations and added some chili powder. I also added a teensy bit of cumin powder. What I did... drained 2 cans of Mexican Stewed tomatoes added the garlic , put in a small onion chopped in large pieces. I added alot of cilantro since I love it. A bit more than it called for. Added the lime juice, salt, cumin and chili powder and jalapeno wheels. I pulsed a few times and found Salsa Heaven. Thanks !!!

White Bean Spread With Garlic & Rosemary

This recipe is really good and super easy. Things I did... I sauteed the garlic in about 2 tablespoons of olive oil. I added the drained beans and sauteed them a little bit. I added a 1/4 cup of white wine. Warm through and then added to the food processor and pulsed. I also added about 2 tablespoons of Parmesan cheese in the processor. Used this on crusty Italian bread. I topped some with hot peppers to add a little heat and those were the best ones!!! Very easy recipe to make and different from the usual appetizers you put out. Thanks

Heather's Cilantro, Black Bean, and Corn Salsa

This is a really good salsa. I made it this past weekend and it was delicious. Things I did differently were : I used Fresh tomatoes not canned. About 2 medium ones that I chopped and took the pulp out of. I also added 2 tablespoons of TACO seasoning mix. This gave it a nice flavor. You can also substitute with cumin if you'd like. I omitted the oil and the avocado. I added about 1/4 cup of chopped jalapeno in. I let it sit over night so the flavors could marinate really well. With the leftovers I made black bean quesadillas the next day adding cheddar cheese to the tortillas. Will make again !!
