Brown Sugar Smokies

I served this easy to prepare appetizer and everyone loved it. I did marinate everything overnight. I then baked in the oven & kept warm in the slow cooker for serving. One warning: don't use colored cocktail toothpicks. Some of the color leached onto the smokies making them look almost moldy! But it did not affect the taste at all. Highly recommended!

Homestyle Hot Cocoa

I tripled this recipe & used skim milk with the half and half. I slightly decreased the milk after reading other reviews. I also added a bit more cocoa. I did add about a 1/4 cup of dark chocolate chips when adding the milk & half and half. The dark chocolate chips melted into the mixture as I was stirring, and they gave the hot chocolate a rich chocolate flavor. I can't wait to share a cup of cocoa with my husband who has been out plowing snow on this frigid December day. Thanks, Katherine-Ann!

Old Fashioned Coconut Cream Pie

I made this pie for Easter dinner & it was amazing! I followed other's advice & used cornstarch in place of flour. I also used cream of coconut that I found in our local liquor dept. I used the whole carton of cream of coconut along with half and half to get three cups. I used three egg yolks in place of the eggs, & plenty of untoasted coconut in the filling. I cooked the filling in the microwave on high for about seven minutes, stirring after every minute. By minute seven the filling was very thick, which meant my pie would not be runny. I placed the filling in my homemade pie crust & refrigerated overnight. In the morning I topped it with whipped heavy cream (whipped with powdered sugar & vanilla) and toasted coconut. The pie was beautiful and tasted great. It has held up well and is almost gone on the second day. The only thing I would do differently is lessen the sugar because the pie was a bit too sweet. Thank you Carol for a wonderful recipe, and thanks to everyone else for your tweaks to the original recipe. I think this is the best pie I have ever made!

Oven Fresh Seasoned Potato Wedges

These potatoes tasted great. The seasonings were perfect. We had them with Italian sausage sandwiches that were cooked in marinara sauce in the crockpot. My husband loved the potatoes dipped in the marinara sauce. The other side dish was oven roasted broccoli and sweet peppers. What a delicious and healthy dinner!

Lovely Linguine

Other than adding twice the amount of garlic, & using dried thyme rather than fresh, I didn't change a thing & it is delicious! I used 2 t. dried thyme that came from my garden last summer. I also roast my own peppers when they are getting old. I cut them in large pieces after roasting & keep them in the freezer to add to recipes as needed. This is a perfect meal for meatless Mondays or Fridays during Lent.

Caramelized Turnips

I bought a turnip for the first time in 33 years of marriage! We thought we should try something different. This recipe is great. We loved our turnips! This was a delicious side dish that we will definitely enjoy again.

Chocolate Zucchini Cake III

OMG, this cake is fantastic! I used only one cup of canola oil & substituted 1 C. chocolate chips for the nuts. I had zucchini in the freezer from last summer's garden. I peeled it and pureed it in my food processor. I baked in a 9x13 pan for 50 minutes and it was perfect. Everyone at work loved this cake & could not believe it when I later told them it was made with 3 cups of zucchini!

Fluffy Pancakes

We seldom eat pancakes, but had a craving for them this morning. I doubled the recipe, and we had about five large pancakes & an additional twenty small pancakes that we are freezing for later use. The pancakes were delicious! After pouring the batter on the hot griddle, I quickly dropped several frozen blueberries on top of each pancake. I prefer to do that rather than adding to the batter so I don't end up with blue pancakes! This was so good & a wonderful way to start our day!

Arrabbiata Sauce

This sauce is delicious ... .very spicy but that's the way we like it. I added chopped poblano & bell peppers when cooking the onion. I added the minced garlic for just a minute with the peppers & onions to avoid burning the garlic. I drained the tomatoes before adding but saved the juice in case the sauce was too thick, It wasn't. Arrabbiata means "angry" in Italian. This is a hot-tempered sauce but so tasty!

Debdoozie's Blue Ribbon Chili

This chili is delicious. We just ate it for our Super Bowl dinner, along with cheddar & jalapeno bread, & the usual chili toppings. I added chopped poblano peppers along with a couple cups of water while cooking. I used a combination of pinto & kidney beans. I started it on the stove then transferred it to the slow cooker on low for about five hours. Thanks, Deb!

Zucchini Herb Casserole

My entire family loved this recipe. I used 1/2 c. of rice & olive oil rather than vegetable oil. I used a 14.5 oz can of diced tomatoes w/jalapenos, drained, because my garden tomatoes are not quite ready. I also added chopped poblano pepper when cooking the zucchini/onion mixture. I didn't have cheddar cheese on hand, so I used a colby/monterey jack blend of cheese, & it was delicious. I have six zucchini staring at me & many more in the garden, so I really appreciate this outstanding recipe.

Creamy Twice-Baked Potatoes

This is a delicious recipe. I added minced garlic & fresh chives to the mixture. I topped the potatoes with paprika & a bit of shredded cheddar cheese. I broiled the potatoes for a final few minutes to give them a nice crunchy top.

Delicious Ham and Potato Soup

This soup is delicious & just the right consistency. I added about a 1/2 cup of chopped carrots & more ham than called for. It is a great way to use up leftover Easter ham. The recipe was very easy to prepare and took little time after the chopping was done.

Apple Crumble Pie

My husband & I loved this recipe. I followed other reviewers' advice & tossed the sliced apples with a small amount of flour. I also made two layers of apples, each topped with 1/2 of the sugar & cinnamon mix. I used red & green delicious apples that were getting old. I used my own recipe for a homemade crust that is very flaky. The pie was wonderful, & my husband said it was the first apple pie he had eaten that was not runny.

Best Marinara Sauce Yet

This sauce is delicious and just the right consistency. I sauteed fresh peppers, finely chopped, (the last from our garden!) along with the onions. I chopped fresh basil and added it to the food processor for extra flavor. I also used red wine rather than white because that is what I always use in tomato based sauces. I served the sauce over pesto filled gnocchi. What a wonderful meal!
