Baked Sweet Potatoes
I mixed white potatoes & sweet potatoes cut into small pieces. I also added quartered onions, bell peppers cut in medium size pieces, & whole cloves of garlic. I mixed everything in a bowl with a bit of olive oil, a rosemary & garlic spice blend, fresh ground black pepper, & a bit of salt. I roasted everything for about 35 minutes, turning occasionally. The end result was delicious served with baked tilapia, sautéed spinach & onions, and fresh garden tomatoes, garlic, & basil. Yum!

Brown Sugar Smokies
I served this easy to prepare appetizer and everyone loved it. I did marinate everything overnight. I then baked in the oven & kept warm in the slow cooker for serving. One warning: don't use colored cocktail toothpicks. Some of the color leached onto the smokies making them look almost moldy! But it did not affect the taste at all. Highly recommended!

Homestyle Hot Cocoa
I tripled this recipe & used skim milk with the half and half. I slightly decreased the milk after reading other reviews. I also added a bit more cocoa. I did add about a 1/4 cup of dark chocolate chips when adding the milk & half and half. The dark chocolate chips melted into the mixture as I was stirring, and they gave the hot chocolate a rich chocolate flavor. I can't wait to share a cup of cocoa with my husband who has been out plowing snow on this frigid December day. Thanks, Katherine-Ann!
