I like the concept behind this recipe, saving fat by leaving off the top crust was enticing. However, the marshmallows baked up and then shrunk into little marshmallow pieces quickly- they weren't nice and fluffy. It didn't look pretty enough to serve. It tasted good...but too sweet for me!

Pumpkin Cheesecake II

This recipe was so easy and definitely satisfies my cheesecake craving. It was rich yet light in texture. It doesn't sit heavy in your stomach like regular cheesecake. The prepared graham cracker crusts were the best part- except when they get soggy a few days after it's baked. It's best served the day it's baked.

Crustless Cranberry Pie

This cake came out fabulous. It was moist with a brownie like texture. I left my walnuts in bigger pieces rather than finely chopped which made it hearty. I will definitely make this recipe again! My family preferred it completely cooled rather than hot out of the oven.
