Cindy's Awesome Clam Chowder

The use of the leek soup mix was fantastic. With the addition of another can of whole baby clams this was excellent.

Connie's Zucchini "Crab" Cakes

4 stars ONLY because, even after draining the zucchini slightly, the mixture was too moist to form firm enough patties to dredge with the flour. So... I simply incorporated the flour. Also, I baked the patties (as suggested by another reviewer) in order to reduce fat. The flavor... FANTASTIC! A firm hit with the entire family - including my "no zucchini" spouse. Will definitely stay on my favorites list.

Peach Cobbler Bread

This was a fantastic way to use up substandard peaches - they were a bit lacking in flavor and on the edge of mealy. My choice was to throw them away or give bread a chance. Because of the poor quality of the peaches, I did use 1/2 brown sugar, 1/2 white, and tossed in a Tbsp of peach schnapps (s suggested by others). This bumped up the flavor. Even my son, who thinks peaches should ONLY be eaten fresh, loved this bread. Great toasted!

Roasted Red Pepper and Potato Soup

A definite keeper! I did roast my own peppers and also added a generous dash of habanero sauce. The soup has a great texture and light yet rich flavor. When blending, remember to do so in small batches.

Oyster and Spinach Chowder

I grew up with oyster stew that was simply milk, butter and oysters... and is still a favorite. This is a new dimension... very tasty, very different but still showcasing the oyster flavor. I did as another reviewer suggested and added bacon (diced and crisply cooked). I also added a bit of salt and about a teaspoon of habanero sauce. Wonderful!

Hearts of Palm Risotto

This was a wonderful recipe! My daughter, who does not care for hearts of palm, loved it as well. The Parmesan gives it a nice cheesieness. I was out of white wine so skipped that, but added a half cup of frozen baby peas. With the peas added it's a 5 star!
