Dad's Pad Thai

In my attempt to copy the best take-out pad thai ever, I made this recipe. The only major substitution I made was soy for the fish sauce, plus I added some peanut butter to the sauce. It turned out WAY BETTER than the take-out pad thai. NO MORE TAKE OUT FOR US!!!!! My kids even loved it, but I will back off the red pepper next time (family preference). I loved the spice, but it was a bit much for them. THANKS FOR SHARING!!!!

Roasted Vegetable Lasagna

I have made this several times with outstanding reviews. Recently I split this lasagna into two 8x8 pans and took them to two different families who just had babies. They raved and raved and said it was the best meal they'd ever had!

Banana Crumb Muffins

These are the best banana muffins EVER! So easy to make, delicious, moist, and make for a beautiful presentation. I ran out of butter on my baking day so I used oil per some of the reviews. Since some people don't like nuts, I sprinkled chopped hazelnuts on top of 1/2 of the muffins before baking. They turned out wonderfully. Thanks for sharing your wonderful recipe.

Blueberry Streusel Muffins

Took these to work for a birthday instead of a cake...RAVE REVIEWS! These muffins are awesome and make for a beautiful presentation. If you like a sweeter muffin, use a bit more sugar. I made as is and my co-workers actually commented on how they liked that the muffins weren't so sweet and overpowering the blueberries. HIGHLY RECOMMENDED!!!

Slow-Cooked Pulled Pork Shoulder

best. pulled. pork. EVER. I used cider vinegar and pork tenderloin because that's all I had. After RAVE reviews from our guests, one of them asked where we had the pork catered from! It was "melt in your mouth amazing" per my husband.

Banana Bread VIII

Thanks for the great recipe. I had some bananas that were beyond ripe but didn't have any eggs...found this recipe and made in a muffin pan to shorten the baking time...turned out WONDERFUL! Probably the best banana bread I've ever tasted!

Blueberry Pancakes

I make pancakes for my family at least once a week. I tried this recipe to change up what I normally fix and they were perhaps the BEST pancakes we've ever eaten. My husband loved them so much he took the leftovers to work the next morning so he could brag to his co-workers. This is definitely a keeper for our family!

Chicken Cordon Bleu II

Excellent recipe!!! It's a great company dish...elegant, but without the fuss. I simmered the chicken in the wine as the recipe called for, but I made the cream sauce in a seperate pan with the cream and additional wine.

Two Ingredient Pumpkin Cake

This IS so easy! I made them in a muffin pan and we ate them for breakfast! I did add the eggs as others had suggested and also added a streusel topping. I think next time I make them, I'll add a layer of cream cheese in the middle. Definitely a keeper for my family!

Onion Meat Loaf

Cocktail Meatballs I

I added a bit of extra brown sugar thinking that the vinegar and ketchup might be too overpowering. I probably added too much, but I did get a lot of comments on how surprisingly sweet these meatballs were. Everyone loved them! It's a keeper.
