Authentic Chinese Egg Rolls (from a Chinese person)

Reviewed: Jan. 16, 2008
Wonderful! I didn't really use oil, just cooking spray. I omitted the MSG, and I actually "fried" the eggrolls in the cooking spray to brown, then put them in the oven at 425 for a few minutes. They were crispy & yummy. Didn't look as pretty as fried, but much healthier. I also only used egg whites & used the Chinese Pork Tenderloin from this site for the pork & sweet & sour sauce from here as well, but they really didn't need the sauce. A+ & very healthy with slight modifications. Thank you for sharing!

A+ Green Bean and Walnut Casserole

Reviewed: Nov. 22, 2010
This was good, but I changed it up a bit. I added four slices of bacon and a little mozzerella cheese. The inside was great. The topping was just ok. The walnuts were nice, but I think I prefer the tried & true french's onions on top.

Yummy Sweet Potato Casserole

Reviewed: Nov. 22, 2010
Really good! I put mine in a round dish so it took longer to cook (deeper pan). I would stick with the 9x13 pan, as my topping was a little dark. I did double the topping as a few suggested. Better than the traditional marshmellow topped sweet potatos, for sure! :)

Chocolate Cappuccino Cheesecake

Reviewed: Jul. 18, 2010
Very good. Used a cup of water in the oven & it turned out perfectly. I don't think it needs the coffee flavored whip...good with just plain whipping cream would be enough. Also, plan to make the day before as it is much better the next day. Overall....huge hit!

Sausage Pasta

Reviewed: May 17, 2010
This was REALLY good! Only slight variations: Cooked the onion (used about ¼ of a purple onion) in the oil before I put in my pork. For the spinach, I used up the last of my fresh baby spinach we use in salads that was a little wilted. I don’t like it soggy, so to make it tender, I just tore it up and put it in the bottom of my colander before I drained the pasta, so the boiling water poured over it. I also used chicken bouillon to cook the pasta & used all the left over pastas I had (some whole wheat, some spiral, some elbow), and fresh basil chopped fine rather than dried…and I added a little bit of cayenne pepper to the sausage as it cooked for a little spice (about 1/16 tsp). I think it would be good with zucchini or asparagus tips too. ? Was a total throw together meal that ended up being really good! Try it!

Chinese Pork Tenderloin

Reviewed: Jan. 16, 2008
This is a great marinade. If using in pork fried rice or eggrolls, be sure to really trim your meat. It took forever to trim the fat off the pork after it was cooked when cutting into matchbook size strips. Also, I didn't have any sherry, so I used vinegar & marinated for about 30 hours. Takes authentic! :)

Mint Tea Punch

Reviewed: May 9, 2011
Super FABULOUS! We LOVE this stuff. Men don't usually like it, but always a big hit with the ladies. Made it again for a mother's day bruch, and was a big hit (as usual). I do steep for longer than it states (tea for 15 min...then remove & continue to steep the mint for another 30 min or so). Better the next day when the flavors can meld together. We also decrease the sugar to about 2/3 to 3/4 cup. Delish!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 22, 2010
We were not fond of this recipe. I had high hopes but thought it was an odd combination of flavors. I will stick to traditional stuffing from now on. I used fresh herbs and did not stuff the bird...just cooked in a separate dish. ;(

Chunky Cheesecake Brownies

Reviewed: Nov. 16, 2010
Good...really good! :) I decreased the flour to 1/2 cup and used a little less (like 1/2 cup) chips in the cheesecake mixture. Delish. Made in Demarle muffin tins and baked for about 25 min. No stick...and YUM!

Adobo Sirloin

Reviewed: Jul. 5, 2011
Really good! Used the marinade on chicken breasts for fajitas. Marinated for approx 24 hours. I added about 3 tbs of olive oil to the marinade to help with sticking on the grill. I also a mix of fresh & dry oregeno & extra cumin. It is a do-over. :)

Beef Stew IV

Reviewed: Nov. 16, 2010
Good stew. I doubled the seasoning and floured meat in pan. I deglazed pan with red wine and stuck in the crock pot for about 6 hours. In last hour I added potatos, carrots and a can of corn. I thickened with mash potato flakes. Makes a nice thick hearty stew. Also good to deglaze with beer.

Frozen Mudslide

Reviewed: Jul. 18, 2010
Delicious. Better than premade mix. We used rum cream rather than Irish Cream, as that is all we had on hand. A little whipped cream and chocolate shavings on top & you have a gorgeous drink. YUM! Wish I made more!

Slow Cooker Beef Stew IV

Reviewed: Dec. 12, 2007
I made this stew but changed a few things. I used beer rather than wine, used a package of "beef stew mix" rather than the onion soup mix...and to thicken it up a bit (I like thicker stew) at the last half hour or so I added mashed potato flakes. Served it to about 10 people...everyone said it was the best stew they EVER had...HUGE hit! Thanks!

Amazing Chicken

Reviewed: Nov. 16, 2010
5 star with modifications. Made a mixure with the mayo with 1 tsp minced garlic (jar type), about 1 tsp lemon juice, 1 tsp of each fresh basil and oregeno (also jar type). Seriously OMG good. Made with easy alfredo sauce from this site. Off the hook good.

Broccoli Cheese Soup

Reviewed: Sep. 26, 2010
Takes better than Panera! Very good soup! I used fresh broccoli (2x amt shown), half & half rather than milk, and minced garlic rather than powder. Huge hit at our house. Made a big batch & froze in individual servings to enjoy later. Not exactly healthy, but so delicious. :)

Slow Cooker London Broil

Reviewed: Jul. 29, 2010
This was decent, but will probably not make again. Used London Broil & cooked potatos & carrots in a tin foil packet on the top. Flavor was decent, but nothing spectacular.

Chicken Fettuccini Alfredo

Reviewed: Jul. 18, 2010
Good, but not quite perfect. I did not use mushrooms or tomatos though which may have made a difference. I used fresh basil & oregeno. Honestly, was better on day 2 heated up with a little milk. Flavors seemed to come together better. I would make again though.

Garlic Spread

Reviewed: Jan. 15, 2008
Really good spread. I used 1/3 fat cream cheese, and margarine. I also used a little onion poweder rather than the onions. Used fresh basil & fresh oregeno. Delish on sliced sourdough bread & broiled. I used the Fast & Friendly Meatball recipe from this site to make Meatball sandwiches with it. Yum!

Original Nestle® Toll House® Chocolate Chip Cookies

Reviewed: Nov. 12, 2010
Maybe I am a cookie snob, but I wasn't a huge fan of these. They were good....but not AWESOME. This is the recipe on the back of many choc chip bags. Good...don't get me wrong, but nothing to write home about.
