Slow Cooker Beef Stew IV

I made this stew but changed a few things. I used beer rather than wine, used a package of "beef stew mix" rather than the onion soup mix...and to thicken it up a bit (I like thicker stew) at the last half hour or so I added mashed potato flakes. Served it to about 10 people...everyone said it was the best stew they EVER had...HUGE hit! Thanks!

Fajita Marinade I

Chicken Tortilla Soup V

SOOO Yummy! I boil and shred the chicken first, then wash out pot and add the oil. I sauted the onion and garlic before adding the shredded chicken. I also added a can of black beans. This is really good soup!

Maple Apple Crisp

Great desert! I added a little more brown sugar, and I ran out of oats and didn't quite have enough so I ended up using a little bit of yellow cake mix on the top as well. Turned out really great!

Apple Cinnamon Oatmeal

This is really yummy! It was not quite sweet enough for our family either. I added about 1/3 cup brown sugar, and adjusted to make 4 servings. Big hit in our house! Thanks!

Hot Artichoke and Spinach Dip II

This was good...but not GREAT. I was really hoping for FANTASTIC. I split the mayo 50/50 with sour cream. I did not have a hard crusty top either. I used finely shredded cheese, don't know if that made the difference. I think I prefer regular old spinach tip to this. Maybe next time I make that...I will toss in some artichoke hearts! :) Happy New Year...

Holiday Chicken Salad

WONDERFUL! Great on a soft whole wheat bread with lettuce. Also really good with halfed grapes rather than cranberries. Both are super yummy!

Florentine Stuffed Chicken

Really good as is. I pounded boneless skinless breasts and filled with mixture (which I added ricotta cheese to). It didn't even need toothpicks. I found once pounded & filled one breast made two servings. I served with whole wheat penne pasta. 5 delicous stars.

Fast and Friendly Meatballs

These were really good. I added sage, marjoram, fresh oregeno and a tad of fresh basil. I baked for 15 min on one side, flipped, and baked for 10 then I added to crock pot with home-made spaghetti sauce. Served with whole wheat spaghetti Really, REALLY good!!!

Southwestern Egg Rolls

These were really good. I sprayed with cooking spray and baked at 475 for 12 minutes. I also used the chopped jalepenos that are jarred (in the produce dept with the jarred minced garlic). I added a bit more chicken (boiled in garlic and salt then shredded) and corn. They were a hit even with my picky husband. Thanks for sharing

Asian Lettuce Wraps

Delish! I used ground turkey, fresh grated ginger, and I only had regular vinegar, but this was soooo good anyway!! I also didn't have any chili pepper sauce...but I did have some jarred jalepeno so I used about a teaspoon of that. REALLY, really good. Thanks!

Garlic Spread

Really good spread. I used 1/3 fat cream cheese, and margarine. I also used a little onion poweder rather than the onions. Used fresh basil & fresh oregeno. Delish on sliced sourdough bread & broiled. I used the Fast & Friendly Meatball recipe from this site to make Meatball sandwiches with it. Yum!

Chinese Pork Tenderloin

This is a great marinade. If using in pork fried rice or eggrolls, be sure to really trim your meat. It took forever to trim the fat off the pork after it was cooked when cutting into matchbook size strips. Also, I didn't have any sherry, so I used vinegar & marinated for about 30 hours. Takes authentic! :)

Authentic Chinese Egg Rolls (from a Chinese person)

Wonderful! I didn't really use oil, just cooking spray. I omitted the MSG, and I actually "fried" the eggrolls in the cooking spray to brown, then put them in the oven at 425 for a few minutes. They were crispy & yummy. Didn't look as pretty as fried, but much healthier. I also only used egg whites & used the Chinese Pork Tenderloin from this site for the pork & sweet & sour sauce from here as well, but they really didn't need the sauce. A+ & very healthy with slight modifications. Thank you for sharing!

Sausage Pasta

This was REALLY good! Only slight variations: Cooked the onion (used about ¼ of a purple onion) in the oil before I put in my pork. For the spinach, I used up the last of my fresh baby spinach we use in salads that was a little wilted. I don’t like it soggy, so to make it tender, I just tore it up and put it in the bottom of my colander before I drained the pasta, so the boiling water poured over it. I also used chicken bouillon to cook the pasta & used all the left over pastas I had (some whole wheat, some spiral, some elbow), and fresh basil chopped fine rather than dried…and I added a little bit of cayenne pepper to the sausage as it cooked for a little spice (about 1/16 tsp). I think it would be good with zucchini or asparagus tips too. ? Was a total throw together meal that ended up being really good! Try it!

Frozen Mudslide

Delicious. Better than premade mix. We used rum cream rather than Irish Cream, as that is all we had on hand. A little whipped cream and chocolate shavings on top & you have a gorgeous drink. YUM! Wish I made more!
