Crunchy Apple Salad with protein +++

I make this with greek yogurt instead of mayonnaise (egg allergy) and it really increases the protien. Also, its great to add tuna or chopped chicken. The nuts are best when added just before serving so they don't get soggy.

Kiwi Salsa

This is a great recipe for a sweet salsa with a bit of kick. I had some kiwis to get rid of and didn't know how to best use them. I used green onions and a sweet white onion because that was what was on hand. I also used agave instead of honey. Next time I'll add mango & avocado - its a very versatile dish. I had some guests over for mexican dinner night. This dish made a great appetizer with tortilla chips in front of some fresh fish tacos. It would have been good with the tacos but didn't last long enough! The cumin and curry really add alot so don't forget them!!!

Banana Banana Bread

This is AMAZING! It is my new banana bread recipe and I will never change it. Very versatile and easy to add to/modify but still comes out moist and dense. YUMMY!

Lobster Bisque

I did not try this as written but used m in miami's suggestions about cream, tomato, cyanne, etc and turned out great. Tip: if using immiation meat puree it first with milk if you like bisque texture.

Amazingly Easy Irish Soda Bread

I split into 2 loaves (froze one), baked at 350, added raisins, used kitchenaid mixer. Yep. It really is easy. Foolproof. Thanks!

One Pot Tuna Casserole

This was great. Much easier than making white sauce (like I used to) so its a keeper. I left out the butter and cheese, added sauteed garlic, carrots and celery and fat free sour cream. It works well with canned chicken too. Use the big can or 2 of the small ones. More if you really like meat.

Apple Breakfast Popover

Rose and fell but didn't effect taste which got 5 stars in my house. We couldn't believe that I made this (even me!) but it was easy and impressive. Left some apple skins on and subed sugar/cornstarch for jelly. Caution: sticks to pan - be generous with spray.
