Simple Scones

This is one of my old stand-by recipes. I make at least three times a year, usually in the summer. I was blessed by inspiration to chop up and add a half cup of left-over trail mix my family seemed to have lost interest in. While making this current batch it suddenly occurred to me that adding a quarter teaspoon of cinnamon would be a nice touch (It was probably my Kitchen Angel - Thank you, Kitchen Angel!) It really brought all the flavors together. This recipe is going into my collection for good!

Golden Sweet Cornbread

This was a very good recipe! I took the suggestion of using melted butter instead of vegatable oil and it made all the difference! I ended up with a much richer tasting cornbread than I had before. My family also commented that the first batch of cornbread had a slightly acidic taste to it so I cut the baking power amount down to 2 teaspoons and that seemed to work out as well.

Slow Cooked Apple Brown Betty

I agree with all the rest of the reviewers, this recipe is definately well worth it! It's very sweet and very buttery. My change was only that I used 10 slices of Apple Cider Raisin bread available at the local grocers at this time of year. It is a rather large loaf so 10 slices made a batch that was more bread than it was apples. No problem. My family loved it anyway. The next time I make it, I think I will go 5 and 5. 5 cups of apples and only 5 slices of bread. This recipe is going into the recipe box, there is no doubt about that!

Apple Betty

This recipe was a last minute find and what a find! I made it for my church choir's annual "Welcome Back From Summer Break" picnic and it received many, many compliments. To those of you who advised doing the sugar as 1/2 white and 1/2 brown, thanks! The advise was well taken. Like many here, I also doubled the recipe and added a cup of raisins to the apple mixture (I like raisins!). The addition made for a very flavorful touch. Thanks for the recipe, Barbara! It is definetly going into the Recipe Box! -MEB
