Cajun Chicken Pasta

This, as it is, was just okay for me. I feel like it has tremendous potential, but it was just a little off. First and foremost, I would change the noodle from linguini to penne or farfalle. It seems like it would be a much better accompaniment to the flavors. I almost doubled the spices and it still didn't have enough kick to it. Perhaps it was the particular cajun seasoning I used (Emeril's Bayou Blast) but something was definitely missing. I will try and add Tabasco if I make it again. I also think using grilled chicken would make this dish much better and would make the flavor of the chicken really stand out. Overall, just okay.

Chicken Chimichangas

I love chimichangas and this was my first attempt at making them...and what a successful one it was. These are easy and delicious. I used canned chicken breast, which although it is canned, I feel when putting it in something like this where you are smothering them with sauce and stuffing them in a tortilla, it turns out great. Its the cheapest and easiest way to get chicken for something like this.

Bacon Wrapped Water Chestnuts III

These are wonderful, had to cook them a little while longer and I didn't drain the grease and while they were still great, I think draining the grease would have made them even better. I like the idea someone else had about using a metal rack to let the fat drip off into the bottom of the pan, that way you don't have to worry about having to empty to bottom of the pan half way through

Honey Orange Basil Chicken

This chicken is quiet delicious. I did use fresh basil because I had some on hand and needed to use it, but other than that, I followed the recipe. Grilled chicken always has a great taste, but the after taste of this chicken is really what made the marinade worth it. Yum!!

Classic Chicken Noodle Soup

This was really yummy, I made it for my hubby when he was sick :( We had tons of leftovers. It heated up well bowl by bowl although the noodles did get a little bit soggy. Still delicious though.

The Hudsucker Pasta

This is delicious! I made it without the nuts and didn't miss them at all. This recipe makes enough to serve six, especially if serving it with a salad and some bread. I did use the whole 16 oz package of pasta. It has a great flavor to it!!

Spinach Caprese Salad

I had limited items on hand so I used romaine instead of spinach, dried basil instead of fresh and red wine vinegar instead of balsamic. I just layered everything. I know it would be better with the fresh basil but it was still very good this way!

Glazed Meatloaf II

This meatloaf is great! I have made it several times and it always has good flavor to it. I like to add about a 1/2 tsp minced garlic and I love to make some extra sauce to pour on top of it! Soooo yummy!!

Strawberry Avocado Salad

This salad is sooo yummy! I made it as is and the flavors combine together wonderfully. Next time I think I will add some cheese, maybe feta or bleu. I think it would also be good as a meal with chicken! Try this, you won't be sorry!! Then, I made it again, this time with roasted chicken, blue cheese, and blueberries and it was a delicious dinner salad. I had to double the dressing in order to accommodate for the extra toppings and it was WONDERFUL!!!

Ghirardelli Chocolate Raspberry Cheesecake Hearts

This is a very rich dish. I followed the directions to-a-t and it turned out great. However it isn't very cheesecakey. The chocolate layer is more like a fudge than a cheesecake. If you want cheesecake, this probably isn't the best recipe as is. I baked it for 40 minutes in a 13X9. Definitely line it with parchment paper if you are wanting to use cookie cutters, I ended up sabotaging a portion of it trying to get it out of the pan!!

This was delicious! Simple and fresh flavors enhance the natural flavors of the fish. We used Mahi Mahi instead of Halibut and it was to die for!

Amazingly Good Eggnog

I will never be able to drink store bought after making this. It is so delicious! I cut the rum in half and I thought it made for the perfect amount of rum. Any more would have been too strong for me!! Next time I will make sure I have some whipped cream to put on top! It lasted in my fridge for several days and we all were really able to enjoy it to the last drop!!

Green Salad with Cranberry Vinaigrette

This is the most delicious salad! I made it for Christmas Eve dinner and it was probably my favorite part of the meal (and when comparing to turkey and mashed potatoes that is saying something). I used dried cranberries instead of fresh and although I believe fresh would have been better, it worked well. I also added some lemon juice to the dressing and that added great flavor! Will definitely have this again!

Italian Spaghetti Sauce with Meatballs

This is such a great recipe! The only thing I did to change it was to add a cup of Pinot Noir...added a delicious flavor and my friends and family loved it! Best part is it's easy!! And spaghetti always warms people up :)

Savory Vegetable Beef Stew

This stew is so yummy! I made it exactly as the recipe called for except I used celery instead of green peppers and I added 1/2 cup of red wine...really great! I think I'll try the green peppers next time though! Thanks for such a great recipe!!

This recipe is just delicious! I had a hard time finding lobster so I substituted Phillip's Crab and it was really yummy. Will definitely be making this many times in the future!!
