Chicken Tortilla Soup I
I've made this soup 3 times this past week. The first time I made it exactly as the recipe said but without hominy and with the addition of 1 tsp of cumin. The next time, (and each time after), I substituted the 4oz can of green chiles with 1 poblano pepper, 2 seranno peppers and 3 jalapenos. I seeded and removed most of the pith and finely diced the peppers. I also use my own home made chicken stock - about 6 cups - and fire roasted canned tomatoes. This is really good and my family loves it!

Eggplant Parmesan II
I loved this. I did sprinkle the eggplant with salt and let the pieces sweat for 30 minutes. I thought this was excellent though and definitely something I'll make again.

Tiny Chicken Turnovers
These were so good! I made them for a dinner party that I had recently. I've read the other reviews though and I'd like to offer a couple of tips for working with a butter pastry. First, make sure that your butter and water is very cold. I usually pop mine in the freezer for an hour or so before making the crust. Another hour or so in the freezer after you've made the crust is a good idea too. I didn't find these time consuming at all.
