Baked Beef Stew

Delicious! I added about a cup of fresh chopped green beans, omitted the tapioca and bread as suggested and used cornstarch instead...and added a little more water with an extra bullion cube. I browned the beef with 1/4 cup of red wine and 2 cloves of chopped garlic. Lastly, I added some fresh Thyme that I had and a teaspoon of Cumin. I had a hard time fitting all ingredients into a 9x13" baking dish, but I made it work. I cooked at 325 for 2 hours and 20 minutes instead of 375. Delicious, will definitely make this again!

Kung Pao Chicken

Yummy! As I write this review I still have the sting of the sauce around my mouth! As the other reviewers advised, I doubled both the sauce mix and the marinade. I added chopped green and red bell pepper as well, and after the chicken cooked, I added the mixture to the sauce and some yakisoba noodles. --For the chili paste, I used Kikkoman Thai Chili Sauce. It was great, I will definitely make this one again!

Cookies 'n' Creme Fudge

Fantastic fudge for the white-chocolate lover!! Super easy to make - just make sure you don't burn the chocolate when you are melting it!!

Chicken Piccata II

Pretty darn good chicken. I did pound out the breasts before I did anything - I also doubled the amount of flour and seasoning that I used to coat the breasts. In addition to these changes, I used the juice of one lemon - and frequently squeezed lemon juice on the breasts as they were cooking. Great lemon-y flavor - very tasty, will likely make again!

Whole Wheat Banana Nut Bread

5 Stars all the way - but I also made a few modifications: I used 1/2 of the Oil and Subbed No-Sugar Applesauce for the rest. I also added about a teaspoon of Cinnamon, and a couple dashes of Pumpkin Pie Spice. Lastly I also added about 1/4 Cup of Semisweet Chocolate Chips. Talk about GOOD! I love this recipe because its made entirely of whole wheat flour - which I always try to eat. I used Canola Oil instead of "Vegetable Oil" for the health benefit as well. I'll be making this one again!

Shirazi Salad

Shirazi Salad is a staple in our house - (hubby is Persian). I add a few dashes of Red Wine Vinegar, Extra Virgin Olive Oil, and use about 2-3 Tablespoons of Lemon Juice instead of 1 Teaspoon - I also add dried mint! Fantastic flavors!
