My Kid's Favorite Pork Chops

Jjst perfect for the two of us. I chose to use a little less BBQ sauce since we are both beer flavor fans. Worked great on a busy work night and flavor was excellent. I chose to mix in BBQ sauce and beer in amedium sized bowl, then added the salt and pepper. Threw the chops in the bowl for about ten minutes or so then added the entire contents of the bowl to the skillet turned out fantastic! Served it along fresh steamed broccoli and potatoes.

Baked Honey Mustard Chicken

This was a nice easy dish to make. I added a little garlic to the honey mustard sauce just because I am a big fan of garlic. =) I found the sauce to be a great way to dress up the chicken without being over bearing. As always with the recipes I use I scale it down to 3 servings as there are only two of us and it was not hard to do. I sevred it with brown rice and steamed veggies. Just yummy!

Simple Turkey Chili

Made this for Super Bowl this past weekend and it was a hit! Love how easy it was, and the kick of spice! I served it with cheddar cheese and freshly chopped onions rather than the sour cream and it was perfect. Easy to keep warm also in the slow cooker and was perfect for serving.

Asian Beef with Snow Peas

The recipe was very simple and delicious! I flaked and didn't have any cornstarch on hand, however I just doubled the measurement and used flour. Same consistency! I also added some fresh mushrooms and spinach, we are veggie type folks. Plenty of flavor for such a simple dish! Quick and easy on one of our crazy weeknights!

Allie's Mushroom Pizza

Yum !! We used a Boboli Whole Wheat crust and it was an excellent pair! I also omitted the sesame oil and put a nice healthy layer of garlic in with the olive oil. Super easy, quick, and great taste. Our side dish for this was a mixed greens salad with tons of veggies and a raspberry vinnaigrette. Perfect pairing! Great for a "team" dinner where the whole family can help make it!

Pesto Pasta with Chicken

Not too bad. I enjoy this type of pasta, however with the given measurements, it was not enough flavor. We doubled the amounts of sun dried tomatoes and added a bit more pesto. Still a good choice.

White Chili I

My favorite thing about this dish is its simplicity and ease. Made this on a Saturday before going to a movie. Also took the suggestion of making some cornbread and using a bagged salad. Perfect for a busy evening. I used a pre-packaged chili seasoning rather than using all of the ones listed. I enjoyed the flavor as did the boy. I would suggest however more beans to add some heartiness, the one can seems to not be enough.

Grilled Salmon I

Was an okay marinade. I added three whole lemons to the marinade the second time I made it. Juiced them and left them in the bag. Added a little more kick which was enjoyed all around.

Tomato Chops I

Very simple and good. I added bit more spice than garlic, using oregano and rosemary. Served it with brown rice and veggies. Delicious. I also found that I had a ton of sauce left over. I just put the leftovers in my crock pot and heated it up the next night and served over whole grain pasta. Simple and flavorful sauce to use as a quick meal!

Lentils And Spinach

This was good, however not great. I added a bunch more veggies, cauliflower and carrots. I also added tomatoes. I used a bit more spice with cumin, garlic and I added a pinch of fresh rosemary. That really made it aromatically appealing. Served over brown rice and it was quite a hearty meal. Plenty of left overs for lunch the next day for both of us.
