Mexican Mole Sauce

The sauce was good but definitely could have used more kick. Next time I will toss in some chili powder and more cumin etc.

Baked Tilapia

I doubled the spices and omitted the butter. It was absolutely delicious and flavorful that way. In the future I would substantially cut down the amount of olive oil put in the baking dish -- it was unnecessary. Can't wait to make this again!

Sweet Onion BBQ Burgers

I only used 1c. bbq sauce for the marinade but found that was excessive. Could've easily used 1/2 that amount. The burgers were good, though, and definitely filling.

Tofu Lasagna

Per everyone else's suggestion, I used 2 jars of sauce and 2 cups of cheese for the sauce mixture. I also added a layer of spinach, mushrooms, onion and zucchini and increased the amount of spices. (used cinnamon instead of nutmeg w/no problem.) Turned out great.

Baked Halibut Steaks

I followed the suggestion to bake for half the time w/tin foil cover and then remove the foil. Kept the feta looking good. Overall, the fish looked beautiful -- the presentation aspect was tops. And the taste was yummy, too. (I left out the olives bc I hate them and no one missed them.)

Candied Sweet Potatoes

Like others, I didn't precook the potatoes. Just put them in a dish, poured the sauce over and baked for an hour or so. Also added cinnamon and pumpkin pie spice, as well as pecans to the top. Came out exactly as I expected.

Quinoa and Black Beans

I made this without the cumin and it was completely flavorless. With the cumin, the dish is much better -- zippy with flavor -- but the first taste is still bland.

Fruit and Cream Pie I

5 stars because it was soooo easy and delicious. It doesn't look super elegant, though, so I wouldn't necessarily make it to impress people. I used a chocolate graham cracker crust, which went well with the strawberry flavor. I didn't have confectioner's sugar so I just used Splenda. I was worried about the result, but it still came out great.

Artichoke Spinach Lasagna

My family *demolished* this dish -- they couldn't stop raving. I used the full amt of liquid (vegetable broth) but then cooked it down. Figured it might give the veggie filling more flavor. Also dumped in one zucchini and a package of mushrooms, which I think added a good amount of heft. The mixture of mozzarella and feta on top, as well as the artichokes, really gave a great flavor.

Blackberry-Chocolate Chip Pie

Super easy, which means extra points. The flavor is very basic, but good. Got mixed reactions -- some really liked the berry/choco flavor combo, others hated it. I liked it, so I'll def make again! Served warm with some whipped cream on top...

French Spring Soup

I think this was too creamy. It smelled delicious before I added the cream. (I had used vegetable stock for the broth.) Maybe next time I'll just make it w/o the cream. Also didn't add the spinach because it was already very bulky before I got to that step.

Lemon Curd Bars

Too much crust, not enough lemon! I left out ~ 1/4 of the top layer crust, and it was still too much of the dough aspect, and not enough flavor. I would suggest doubling the lemon curd and keeping the amount of dough the same.

Grilled Salmon Steaks with Savory Blueberry Sauce

Following everyone's suggestions, I used only 2 tbsp balsamic. At that amount, I thought it balanced the blueberries fine. Overall, the taste was unusual, which I appreciated, but still not necessarily something I would want to make again.

Zucchini Miso

I skipped the sesame seeds and nori for ease, and this was still a winner. It was slightly salty for my tastes (a function of the miso, as far as I can tell) but otherwise great. Also, I mixed all the dressing ingredients except the broth together, then eyeballed the amount of broth to get the desired consistency (since other reviewers had warned 1/4c was too much). Everyone loved it!

Raspberry Sour Cream Pie

Awesome! The sour cream turns into a custard-like texture which is really great. My pie was quite tart, but I bet that varies depending on your raspberry batch. I used pre-sliced almonds instead of walnuts and they came out great -- really added to the taste. I accidentally baked the filling and topping all at the same time, but it came out looking beautiful -- everyone thought the pie was store-bought! Without altering filling or topping quantities, this yielded one overflowing, delicious, gone-in-five-seconds pie.
