Blueberry Coffee Cake I

Reviewed: May 19, 2008
Love, love, love, loved this!! Tastes amazing!!! I followed other suggestions and did the 1 1/2 cups of flour, 2 eggs and 3/4c. of milk. Came out moist and perfect. I used all the of topping; I put half in the middle with the blueberries and the rest on top. I think it MADE this cake..having some of that yummy strusel in the middle! The other poster was right..it tastes just like, maybe even better, than Starbucks Blueberry Coffee Cake!

Brownie Biscotti

Reviewed: May 16, 2008
Amazing. I have tried for awhile to find the perfect biscotti recipe and this is it! Followed the recipe exactly and when they were done, I dipped one side in chocolate. Let them sit till it hardened and they are PERFECT. Even my 2 year old loved them. I do have to say I adjusted the cooking temps as others have said and it worked out great.

Sam's Famous Carrot Cake

Reviewed: May 11, 2008
I have to say this was very good but didn't quite live up to all the hype. I have had equally good results, and in some cases a bit better, buying a carrot cake mix and adding the pineapple, raisins, nuts and coconut. Followed the directions in this recipe exactly and after 50 minutes the cake was a tad overdone ( so keep a eye on it because I don't think the hour time frame is right on.) Maybe this was the issue with me but it tasted a litte dried out and not as moist as I hoped it would be. The best part...I did as other suggested and made the Cream Cheese Frosting II and it was HEAVEN! I probably will never use cream cheese frosting from a can again! All in all, it was a good cake, not great but good..no rave reviews from any one but just good.

English Royalty Chocolate Chip Scones

Reviewed: Apr. 23, 2008
These were VERY good! The closest thing I have gotton to bakery/Starbucks scones! As others have said, you have to at least double the amount of OJ to get a good dough..I just kept adding a bit at a time till it was right. I think next time I might sprinkle a little sugar on top when they come out for just a tad extra sweetness!

Easy Garlic Broiled Chicken

Reviewed: Mar. 29, 2008
Wonderful! Definite keeper! Served it for dinner tonight for guests and everyone loved it. I did cook it at 375 for a little less than a hour but my chicken was still a bit frozen. Everything else, followed directions and it turned out great!

To Die For Blueberry Muffins

Reviewed: Feb. 19, 2008
YUMMY!! I make muffins all the time..various recipes and these are BY FAR the best ones ever! I can not understand how anyone can give these a bad review unless they made a mistake or they used bad blueberries. I followed the recipe exactly..they were enough for 6 jumbo muffins. I did toss the blueberries with some flour before mixing them in, just to make sure they didn't bleed in. I do agree that the recipe makes a LOT of the strusel topping and I would probably cut that back the next time I make them. But they were still SO SO good!!

Chocolate Chip Pancakes

Reviewed: Feb. 11, 2008
These were some of the best pancakes I have ever had! I made them as a treat for my husband and 2 year old on a Sunday morning. They were great! I followed the directions and they were light, fluffy and chocolatey! Even if I didn't add the chocolate chips, it would still be a great pancake!

Slow Cooker Creamy Potato Soup

Reviewed: Jan. 11, 2008
SOOO good! Turned out perfect. I only had 1 can of evaporated milk (5ozs.)and used Fat Free Half and Half and it still turned out rich and creamy. Some of the bacon did get a bit mushy so I ended up just sprinkling most of it on the soup at the end.

BLT Pasta Salad

Reviewed: Oct. 8, 2007
This was pretty good. Followed directions pretty much exactly but used Garlic Ranch dressing! I did add all the bacon in beforehand and I should have just followed the directions. It is best to add them last!

Stuffed Eggplant Parmesan

Reviewed: Oct. 5, 2007
Really good! Husband loved it and asks for it often. The easy way to hollow out the eggplant was with a melon baller..MUCH easier than with a spoon or knife. Followed recipes pretty much exact except I put bread crumbs on top. Then when done, I put some warmed marinara on top.
