Zucchini Patties

Great recipe! My kids loved that Mom was making "zucchini pancakes!" I didn't have any problem with the moisture and didn't drain it at all. I did add a bit of garlic powder, some parsley, black pepper, and some Italian seasoning and they were SCRUMPTIOUS!! I enjoyed eating them all by themselves, but I bet they would be great with marinara sauce, too.

Onion Soup Mix

I was in the middle of loading my crockpot and realized I didn't have a packet of onion soup mix. Very glad I found this recipe! I was able to pull it together--My crockpot dinner turned out great!

Original Ranch Roasted Potatoes

I used more potatoes than the recipe called for, probably about 5 pounds. I still used the ranch packet but to make sure there was still good flavor, I added salt, black pepper, onion and garlic powder, and a generous amount of an all-purpose herb seasoning. I also used olive oil instead of veggie oil, I prefer flavor.

Kathy's Delicious Whole Slow Cooker Chicken

We used the pressure cooker instead of the crock pot, and it worked out great. I suggest not to skip the sesame oil--it adds such great flavor. We did cut the olive oil in half as other reviewers suggested. I think if we had let it marinate in the sauce mixture before cooking this would have been even better. The dark meat was awesome, it had great flavor. So tender and juicy! White meat wasn't as impressive, so will definitely marinade it next time and see if that helps.

Irish Champ

Made these for St. Patricks Day and the family all enjoyed. Leftovers were enjoyed the next day, too! Note: I tripled the amount of potatoes (used about 2/3rds of a 10 lb bag) and still only used the 1 C. of milk and 1/2 C. of butter. Plenty moist--I cant imagine how runny they would have been if I had used 3 C of milk! Also, I used about 8-9 stalks of green onion and they had plenty of onion flavor. Really didn't need to add anymore onion.

Irish Tacos

Very good flavor combinations--a great way for our Irish family to celebrate the St. Patty's holiday, and we enjoyed them a lot. Based on other reviews, we added some mashed potatoes, which was good, but would I would have enjoyed them the same without the spuds. I wish corned beef wasn't so pricey--we would make these a lot more often.

Shrimp Couscous Salad

Delicious, light, and makes for a great summer time dish. We used cilantro instead of parsley. Its what I had on hand and we just love cilantro. We also added some diced cucumber to stretch it a little further. My kids scarfed it down. Will definately make this again!

Tortellini Bacon Broccoli Salad

Try this one--its very good. Coleslaw dressing was yummy! We used turkey bacon to be healthier, and I was nervous that I might be disappointed with it, but was pleasantly surprised. Probably will try the real bacon next time though. Also, just because, I added dried cranberries to the mix, and they were a good accompaniment.

Pumpkin Muffins

Yummy and moist!! I omitted the raisins because I didn't have any, but everything else on the ingredient list was in my cupboard, and it was fast and easy to do. I was a little nervous about the texture with the corn bread mix, but it was very good. Will definately do again!

Fresh Asparagus and Chicken Casserole

I tried really hard to make this work...I love all the ingredients in it and thought the concept was great...but I wont be making this again. First off, there is a LOT of prep involved, and if I am going to be dirtying 3 pans and doing that much chopping--it better be worth it!! I made it just as recipe said, but befor putting in oven I tasted the chicken mixture and it was bland, like many other reviewers commented. So I added basil, more oregano, garlic salt, and ground pepper. We also sprinkle top with french fried onions during last 10 minutes of bake time. Unfortunately, the final product was still underwhelming. Sorry!!

Thanksgiving Flavored Turkey Burgers

Different and tasty! We werent brave enough to put the sauce right on the burgers, but had it on the side instead. Without the sauce, would've liked the burgers to be more moist.

Slow-Cooked Sweet 'n' Sour Pork

We liked this a lot and will make it again. We made it all up the night before so I could just plug in and go the next morning, and guess who forgot to get crock pot out of fridge and turn on. I ended up cooking this in large pot on stove top, boiling long enough to make sure pork was cooked through. Sauce was tasty and I thought well-balanced. Not too sour or too sweet, and definately not bland. Perhaps the fact that it marinated all day helped?? We followed other reviews and coated pork in a flour, garlic salt, and paprika mix instead of paprika alone. We also added extra 2 Tbsp brown sugar and squirt of ketchup, then served over white rice.

White Chili with Ground Turkey

Tasty Mexican flavor, but not spicy. We followed recipe exact (except forgot to add cinnamon--I meant to try to add a little at a time to see if I liked the result, but forgot altogether). Anyway, it was very good. Both my 7 and 4 year old ate it up! It was pretty filling already, but next time I will add some corn and some mushrooms to it to make it even chunkier and make it go a little further--we love having leftovers since we are so busy.

Mediterranean Chickpea Salad II

Great idea!! We did make lots of modifications though (which would make it a 4 or 4.5 star dish). I added an extra roma tomato. I sauted my garlic, onion, and green pepper in the 2 Tbsp of oil for a milder flavor (I dont care much for raw onion). We added sliced black olives and crumbled feta cheese too...so good! We swapped out the parlsey for cilantro, which I think is tastier and was cheaper anyway at the store. If I had thought about it, I would have purchased artichoke hearts or hearts of palm to add, too. We ate it over romaine lettuce for our main dish and it totally hit the spot!!

Philly Steak Sandwich

Tasty! Seasoning was very good and would make again, even using different meats. Very good with provolone and mushrooms. We also used garlic mayo as a spread (1/4 tsp garlic salt with 1/4 C. mayo), which really made it super!

Crab Dip

I gave recipe a 4 star instead of a 5 since I modified it. But the recipe was a good starting place for delish crab dip. I added some green pepper, fresh cilantro, and a lil red onion, all finely chopped in my Ninja food processor. The dip was fantastic with the fresh veggies in it--it tasted like summer!!

Grandma's Peach French Toast

What a great way to start the weekend! It was like having a Bed & Breakfast experience right at home! Very tasty! I had most the ingredients on hand, but no french bread. Instead I used about a half loaf of regular bread, cut into smaller pieces. I bet the french bread would have been even better, but still very scrumptious!

Cheesy Ranch Potato Bake

I omitted the butter as many other reviews suggested and found it too dry. I put in about 4 Tbsp butter while mixing in the ranch and the cheese to get the texture I wanted. I then put it in a crock pot on warm so that I could take it to the in-laws for dinner, and I dont know if the crock pot contributed to the dryness, but by the time we ate it, it wasnt creamy anymore. Also, the warm ranch dressing flavor was slightly odd. Still tasty, but I will go back to cheese hashbrown casserole for next time.

Sweet and Sour Chicken III

Superb! Good portion sizes (Fed me and hubby, plus 2 kids, and even had some left over for lunch tomorrow). I used the 16 oz can of pineapple and omitted the ginger because I am allergic, but the flavor was still excellent. I also used the carrot "chips" (crinkle cut slices in salad section of grocery) and they didnt cook up quite as tender as I would've liked. Next time I will make sure they get a little cook time on their own before I add the peppers.

Tortellini Carbonara

Oh yum! I am stuffed and happy!! I did modify recipe by adding two small grilled chicken breasts, diced, and 1/2 C. of peas. I think that is why I ran short on sauce. I ended up adding another whole cup of whipping cream and another 1/2 C of parmesan. Hate to think of the fat calories contained, but it was SOOO worth it! Also, to add a bit more flavor, I carmelized about 2 Tbsp minced onion and 1 tsp. minced garlic in small amount of bacon grease, then added that to the cheese sauce with a sprinkle of black pepper. I only gave it 4 stars because I think without my additions it wouldn't have been quite so tasty.
