Italian Seasoning I
I usually keep a packet of Italian dressing mix on hand, but OOPS!! This worked out great...I didnt have cilantro or savory, so made due without. (I did add worchestire sauce to the recipe to boost the flavor--thinking it might make up for lack of savory.) Also, I cut the amount of red pepper flakes in half, just because I prefer a little less "kick."

Apple Cake III
Delicious!! I stuck with one can of apple pie filling and it turned out wonderfully fluffy. I cut the apples as I added them to the batter so they would be more evenly dispersed. I added 1/2 tsp cinnamon, 1/4 tsp nutmeg,and 1/4 tsp of vanilla to the cake mix batter--I love cinnamon and brown sugar flavors!! I probably could of done a little more and it still wouldnt have been over-powering. I also adjusted the topping because my hubby doesn't like nuts in his desserts. I did 1 C. packed brown sugar, 3 Tbsp softened butter, and a packet of "cinnamon roll" flavored instant oatmeal. The topping was crispy and sweet and a perfect contrast to the fluffy apple layer. (Serve this warm with ice cream!!)

Zucchini Patties
Great recipe! My kids loved that Mom was making "zucchini pancakes!" They have good cheesy flavor like a garlic cheese biscuit sort of. I didn't have any problem with the moisture and didn't drain it at all. I did add a bit of garlic powder, some parsley, black pepper, and some Italian seasoning and they were SCRUMPTIOUS!! I enjoyed eating them all by themselves, but I bet they would be great with marinara sauce, too. We made these a 2nd time with shredded zucchini that I froze in summer when I had too much to use. As the frozen zucchini thawed, there was a lot of liquid, and I did drain that off before adding to the recipe. (I froze 3 cups and ended up with only 2 cups after draining, so it was perfect amount for this recipe!) This time around I forgot the garlic, and while they were still pretty tasty, I missed the garlic.
