This is a solid recipe. My husband and I both enjoyed it. I recommend salting/draining the eggplant before breading and baking so that it isn't bitter. However, I did use plain bread crumbs and added my own Italian seasonings to them, and I also only needed 1/2 the amount of bread crumbs (2 cups) that the recipe called for. Though eggplant is a bit work-intensive, I will probably make this again.
