Rich and Creamy Roasted Eggplant Soup

Asian Beef with Snow Peas

This may be a good basic stir fry recipe but with just beef and snow peas it was really lacking. If I try iti again I will add carrots, mushrooms, water chesnuts, cashews and baby corn.

Department Store Onion Soup

Making this soup is my favorite snowy day activity--and it is an ALL DAY activity. The results are so worth the effort. I use Mayan onions (honey sweets) and Sweet Vermouth instead of white wine. This is s great complement to a good steak and potato meal on a cold winter's day.

Grenadian Spice Cake

The flavor of this cake was good however the texture was a bit dry. We used spices we brought back from Grenada and instead of the loaf pan, we baked the cake in a 9" round cake pan. We dusted the cake with powdered sugar then, to combat the dryness, we served it with whipped cream. It wasn't difficult to made but really not worth the effort of making again.

Easy Paella

We made this dish for a family gathering celebrating foods of the Caribbean. Our extended family thoroughly enjoyed it. It was fun and easy to put together. We added scallops, clams and mussels. Like many other reviewers, we used a yellow rice mix and added corn and peas to it. We also browned and drained the chorizo in the skillet then cooked all the other meats in the drippings.

Spinach Stuffed Chicken Breasts

So very easy and tasty. The first bite was a little bland but after a few more I couldn't believe how good it was. Perhaps those who thought it was dry were trying to crisp the bacon. A definate do again soon meal.

Easy Vodka Sauce

This recipe as printed is pretty bland, but after taking the advice from other reviewers, it was very flavorful. First I grilled up some chicken breast in a cast iron pot, removed the chicken and build the sauce in the same pot. I used garlic, basil, oregano, and parsley to enhance the flavor, then put the chicken back at the very end and served it over pasta. YUMMY!!!

Orange Honey Garlic Chicken

I don't care for dark meat but I picked up some drumsticks on sale in hopes of finding something to do with them. THIS IS IT!!!!! I marinated them for 24 hours using this recipe and then baked them at 375 for an hour in the marinade. They turned out so flavorful and moist. I can't wait to make them again.

Raspberry Vinegar Chicken Breasts

Very Very good. This one will go in my regular rotation. I, too used raspberry balsamic vinegar and it turned out fine. The sauce was rich and the flavors blended well. I served it over buttered noodles with a veggie on the side. Looking forward to making it again.

Seafood Bake for Two

Not bad at all. No halibut at the fish market that day, so being the Jersey Girl I am I picked up fresh flouder. I thought there was an aweful lot of liquid in this recipe, but it made a nice sauce that I poured over the couscous and asparagus as sides.

Grilled Asian Ginger Pork Chops

A very good recipe, but I made a few adjustments according to what I had on hand. I used "country spare ribs" (pork loin) and chili powder instead of paste. I used fresh-squeezed OJ and grated fresh ginger instead of mincing it. Because of weather we broiled the loin in the oven and I this was the most tender pork I have ever eaten.

Classy Chicken

Not only was this dish delish, it was so easy to put together!!! I didn't have any white wine so I substituted Vermouth and it worked just fine. My husband was late coming home from work tha night but the chicken was still moist after poaching in the broth. The sauce reheated well and dinner was a hit.

This was just okay. I followed the recipe exactly and the flavors were good but not great. The egg did very little for the dish and the tortillas came out soggy. I will keep this recipe in the back of my files.

Spicy Sweet Potatoes

I used the basic recipe as a springboard and emptied out my spice cabinet on this one. Next time I will microwave my potatoes first to make them alittle softer and roast some hot peppers in with the potatoes. I served them with BBQ's pork chops and a veggie.
