Addictive Sweet Potato Burritos

A bit bland. If I did it over I would combine the bean mixture with the sweet potato mixture in a bowl first before adding to tortilla. I also would add green chilies. My husband used cottage cheese in place of sour cream.

Greek Lemon Chicken Soup

Made this as is. This recipe as it is written is too salty and doesn't have enough of the carrots, celery, rice and chicken in my opinion. It also doesn't mention the specifics of how to add the egg yolk. Is it a good START as a recipe? Yes it is. Cooks who are familiar with this soup and know what it should taste like, will just need to adjust it for their own tastes and requirements though. Others not familiar with it will need to do the same although this is normally a "lemony" soup so people complaining of its "lemony-ness" probably should do a different soup entirely. Also the lemon tends to highen the saltiness slightly. For changes, read other people's reviews.

Balsamic Bruschetta

I think this is a good basic recipe. I have made it both ways - with deseeded tomatoes and without. Definitely deseeding the tomatoes is the better way to go from a flavor perspective. You also don't need to add more garlic, parmesean, or vinegar if you deseed them. However, this recipe doesn't knock my socks off. I have "improved" it for my husband and I by putting a layer of Boursin Shallot & Chive soft cheese on the toast and then layering the bruschetta on top. Now it is a GREAT appetizer!

Mushroom Risotto

Made as is. 3 starts due to a divided house on this one. My husband LOVED it saying it was one of the best things I've made. I think it's pretty bland. However, I enjoy rich food (i.e. Coopers Hawk Winery serves a Short Rib Risotto that is just amazing which is what I was kind of going for with this dish sans short ribs). My husband does not. Maybe that is the big difference between those that loves this recipe and those that don't.

Meatloaf that Doesn't Crumble

Made this tonight for my husband and I. I was a little nervous with the amount of milk, but it absorbed into the crackers. A fabulous meatloaf. We will be making this again. FYI - it makes two loaves.

Chicken Piccata II

I originally printed this recipe up in 2006. I have been making it ever since and my husband and I love it. We don't make it too often as it isn't the healthiest, but it is good. Two things I do - I remove the chicken from the simmering sauce and then dump cooked egg noodles or angel hair pasta noodles in so they are good and coated before plating. After I plate the food I sprinkle capers over the chicken and noodles.

Oatmeal Peanut Butter Cookies

Good cookie. Made it as directed. However, I think the Outrageous Chocolate Chip Cookie recipe posted by Joan is better. If you make that recipe without the chocolate chips, it's a peanut butter oatmeal cookie.

Quinoa and Black Beans

First time making quinoa. Great recipe. Not sure if it's supposed to be served cold or hot. I do think 2 cans of beans is appropriate vs. other reviewers cutting back to one. I agree with the reviewer below that adding tomato, advocado and a squirt of lemon would be good. Going to try that version next time.
